Abstract
Композиция негидрогенизированных растительных жиров, пригодная для применения в кондитерских жирах. Композиция содержит переэтерифицированный жир, полученный обработкой смеси как минимум одного лауринового жира и как минимум одного нелауринового жира переэтерификацией. При этом такая композиция имеет содержание твердого жира как минимум 50 масс. % при температуре 20 °С и менее 15 масс. % при температуре 35 °С, содержание С12+С16 жирных кислот как минимум 55 масс. % от общей массы жировой композиции и соотношение С12/С16 жирных кислот как минимум 1.
