Abstract
La presente invención se refiere a un producto alimenticio adecuado para su uso como un relleno de un producto de confitería o panadería, en donde el producto alimenticio comprende entre 2 y 85 % en peso de un componente comestible, y entre 15 y 98 % en peso de una composición de grasa vegetal; en donde la composición de grasa vegetal comprende triglicéridos de los cuales entre 25 y 95 % en peso es POP, y entre 1 y 20 % en peso se selecciona de StOSt, POSt, sus isómeros de posición o sus combinaciones; en donde, en la composición de grasa vegetal, la relación de SatOSat / SatSatO es 12 o más; y en donde O es ácido oleico, St es ácido esteárico, y P es ácido palmítico, y Sat es un ácido graso saturado. También se describe el uso del producto alimenticio.
