Abstract
529,745. Ice-cream &c. MUSHER FOUNDATION, Inc., and CLARK, G. M. June 6, 1939, No. 16616. Addition to 506,031. [Classes 28 (i) and 49] Ice-cream and sherbets (as known in U.S.A.), made from fat-containing material, such as cream, whole milk or butterfat, milk solids, sugar, an emulsifying agent, such as gelatin, sodium alginate, starches or gums, and a flavour, such as crushed fruit, nuts or vanilla, are protected against the development of undesirable flavours by adding to the mix a small quantity (not more than 0.5 per cent) of unbleached, dry, unwetted, unboiled, finely divided, degerminated maize, or finely divided, unboiled, dry-processed, unbleached barley or oats, the making of the icecream or sherbet being completed without boiling. Maize is prepared for use by degerminating by the " dry " process and grinding to a mesh of not less than 40 and preferably to a mesh of 60. The addition of the maize, barley or oats may be made after the ice-cream or sherbet mix has been heated to about 145‹ F., or it may be made at the freezer.
