Claims (9)
1. Gefrorenes, mit Luft versetztes Konfekt, das einen Überlauf von über 80% und
unter 250% hat, enthaltend:
weniger als 0,5 Gew.% Glycerin,
den Gefrierpunkt erniedrigende Mittel in einer Menge von über 25 Gew.%
und unter 37 Gew.%, und
- zwischen 0 und 15 % Fett, '
- zwischen 0 und 15 % Fett, '
wobei die den Gefrierpunkt erniedrigenden Mittel ein zahlenmittleres Molekulargewicht
<M>n von weniger als 300 haben.
2. Gefrorenes, mit Luft versetztes Konfekt nach Anspruch 1, das zwischen 2 und 12
0 % Fett enthält.
3. Gefrorenes, mit Luft versetztes Konfekt nach Anspruch 1 oder 2, in dem die den
Gefrierpunkt erniedrigenden Mittel ein zahlenmittleres Molekulargewicht <M>n von unter
275 haben.
4. Gefrorenes, mit Luft versetztes Konfekt nach Anspruch 3, in dem die den
Gefrierpunkt erniedrigenden Mittel zu mindestens 98 Gew% aus Mono-, Di- und Oligosacchariden bestehen.
5. Gefrorenes, mit Luft versetztes Konfekt nach Anspruch 4, das weniger als 5
Gew.% Fructose enthält.
6. Gefrorenes, mit Luft versetztes Konfekt nach Anspruch 1, das weniger als 0,25
Gew.% Glycerin, vorzugsweise weniger als 0,1 Gew.% Glycerin enthält.

7. Gefrorenes, mit Luft versetztes Konfekt nach einem der Ansprüche 1 bis 6, das
mehr als 2 % und weniger als 8 % Proteine enthält.
8. Gefrorenes, mit Luft versetztes Produkt nach einem der Ansprüche 1 bis 6, das
einen Überlauf von weniger als 150 %, vorzugsweise weniger als 140 % hat.
9. Gefrorenes, mit Luft versetztes Produkt nach einem der Ansprüche 1 bis 6, das
einen Überlauf von mehr als 150 %, vorzugsweise mehr als 170 % hat.
