材料及び方法
参加者と、円卓式評価法[round table evaluation]を用いて評価を行った。同様に10 SEVの濃度を有するアルロース、果糖、及びスクラロースを、それぞれ中性水に溶かして評価用溶液を用意する一方、アルロース、果糖、及びスクラロースを含む組成物を調製した。試験用組成物の成分を下記の表に纏めた。混合組成は、甘味料用のビードラー混合公式[Beidler mixture equation]を用いて算出した。甘味料用のビードラー混合公式は以下のようになる。

Claims (24)
- アルロース、果糖、及びスクラロースを含む甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が少なくとも約45重量%、果糖の含有量が少なくとも約20重量%、スクラロースの含有量が少なくとも約0.01重量%であることを特徴とする、請求項1に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約45〜約80重量%、果糖の含有量が約20〜約55重量%、スクラロースの含有量が約0.01〜約0.3重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約45〜約80重量%、果糖の含有量が約20〜約55重量%、スクラロースの含有量が約0.02〜約0.3重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約55〜約70重量%、果糖の含有量が約30〜約45重量%、スクラロースの含有量が約0.1〜約0.25重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約65〜約75重量%、果糖の含有量が約25〜約35重量%、スクラロースの含有量が約0.01〜約0.06重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約70〜約80重量%、果糖の含有量が約20〜約30重量%、スクラロースの含有量が約0.02〜約0.1重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約45〜約55重量%、果糖の含有量が約45〜約55重量%、スクラロースの含有量が約0.02〜約0.1重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約62重量%、果糖の含有量が約38重量%、スクラロースの含有量が約0.2重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約77重量%、果糖の含有量が約23重量%、スクラロースの含有量が約0.05重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約46重量%、果糖の含有量が約54重量%、スクラロースの含有量が約0.06重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 前記組成物のアルロース、果糖、及びスクラロースの総重量に対して、アルロースの含有量が約68重量%、果糖の含有量が約32重量%、スクラロースの含有量が約0.03重量%であることを特徴とする、請求項1又は2に記載の甘味料組成物。
- 甘味向上添加剤、充填剤、香味剤及び/又は安定剤を更に含むことを特徴とする、請求項1〜12のいずれか一項に記載の甘味料組成物。
- 請求項1〜13のいずれか一項に記載の甘味料組成物を含む食品又は飲料製品。
- 前記食品又は飲料製品の総重量を基準として、アルロース、果糖、及びスクラロースの総含有量が約2〜約12重量%であることを特徴とする、請求項14に記載の食品又は飲料製品。
- 前記食品又は飲料製品の総重量を基準として、アルロース、果糖、及びスクラロースの総含有量が約2〜約5重量%であることを特徴とする、請求項14に記載の食品又は飲料製品。
- 前記食品又は飲料製品の総重量を基準として、アルロース、果糖、及びスクラロースの総含有量が約4〜約10重量%であることを特徴とする、請求項14に記載の食品又は飲料製品。
- 前記食品又は飲料製品の総重量を基準として、アルロース、果糖、及びスクラロースの総含有量が約6〜約12重量%であることを特徴とする、請求項14に記載の食品又は飲料製品。
- 前記食品又は飲料製品が食品であり、前記甘味料組成物が前記食品の表面においてコーティング又はフロスティングとして提供されることを特徴とする、請求項14〜18のいずれか一項に記載の食品又は飲料製品。
- 前記食品又は飲料製品が炭酸飲料又は非炭酸飲料であることを特徴とする、請求項14〜18のいずれか一項に記載の食品又は飲料製品。
- 請求項1〜13のいずれか一項に記載の甘味料組成物を含む食卓用甘味料。
- 食品、飲料製品、医薬製品、栄養補助食品、スポーツ栄養食又は化粧品における、請求項1〜13のいずれか一項に記載の甘味料組成物の使用。
- 充填剤としての、請求項1〜12のいずれか一項に記載の甘味料組成物の使用。
- コーティング剤としての、請求項1〜13のいずれか一項に記載の甘味料組成物の使用。
