Abstract
Description
常温で原乳97%(w/w)及び脱脂粉乳3%(w/w)の配合比で原料を混合して30分間攪拌し、90℃で10分間殺菌した後40℃に冷却した。前記混合液にラクトバチルスアシドフィルス(Lactobacillus acidophilus)、ビフィドバクテリウムラクティス(Bifidobacterium lactis)及びストレプトコッカスサーモフィルス(Streptococcus thermophilus)が混合されたスターターであるABT−5(Chr.Hansen、デンマーク、以下、「乳酸菌」と記載)を無菌的に接種して乳酸菌接種液を製造した。
比較例及び実施例1〜実施例5の発酵乳6種を多数の滅菌容器に200mlずつ充填して7℃で冷蔵保管し(Jeio Tech IL−11インキュベータ、韓国)、貯蔵実験を行った。貯蔵期間中、0、1、3、5、7、10、14、17、21、24、28、31及び35日目に試料を採取してpH、滴定酸度(titratable acidity)及び官能検査を通じた酸味の測定を行っており、貯蔵期間中、0、3、7、10、14、17、21、24、28、31及び35日目にはさらに乳酸菌数を測定した。
pHは、採取した試料自体を20℃に調整してpH測定器(Mettler−ToledoSevenCopmpact pH/Ion S220、米国)で測定した。
滴定酸度は、試料9gを取って同量の炭酸ガスを含有していない蒸留水と混合した後、攪拌しながらpH8.3に到達するまで0.1NのNaOHで滴定して測定することにより、NaOHの滴定量を下記の式1により乳酸の酸度に換算した。
酸味の測定は、官能検査を通じて行っており、官能検査のパネルは総10名の訓練されたパネルで運用し、9点尺度法で表2のような基準を設定して行った。
乳酸菌数の測定は、試料を滅菌された生理食塩水に無菌的に希釈した後、BCP plate count agar(Eiken Chemical、Japan)培地を使用して標準平板法で行っており、37℃で72時間培養した後(Jeio Tech IL−11 incubator、Korea)、黄色の集落のみを計数して希釈倍率を乗じることにより、乳酸菌の生菌数を算出した。
アルロースがABT−5に含まれている乳酸菌以外の乳酸菌の生育を抑制して乳酸の発酵も抑制することができるかを確認するために、代表的な乳酸菌18種を対象として培養実験を行った。
Claims (14)
- アルロース含有糖類を含む発酵乳であって、
前記アルロースは乾燥固形分基準、前記糖類100重量部に対して70重量部以上で含有される、発酵乳。 - 前記発酵乳は7℃の条件で製造日から21日〜31日のうち選択された日付経過後のpHの差が0.30以下である、請求項1に記載の発酵乳。
- 前記発酵乳は7℃の条件で製造日から17日〜28日のうち選択された日付経過後の下記の式1により計算した滴定酸度(titratable acidity)の差が0.20%以下である、請求項1に記載の発酵乳。
- 前記発酵乳はラクトバチルス属微生物、ビフィドバクテリウム属微生物及びストレプトコッカス属微生物からなる群から選択される1種以上の微生物を含む、請求項1に記載の発酵乳。
- 前記発酵乳はラクトバチルスアシドフィルス、ラクトバチルスメセンテロイデス、ラクトバチルスガセリ、ラクトバチルスデルブリッキー、ラクトバチルスラムノーサス、ラクトバチルスカゼイ、ラクトバチルスブレビス、ラクトバチルスサリバリウス、ラクトバチルスプラタラム、ビフィドバクテリウムラクティス及びストレプトコッカスサーモフィルスからなる群から選択される1種以上の微生物を含む、請求項1に記載の発酵乳。
- 前記糖類は乾燥固形分基準、前記糖類100重量部に対して15重量部以下のブドウ糖を含む、請求項1に記載の発酵乳。
- 前記糖類は乾燥固形分基準、前記糖類100重量部に対して20重量部以下の果糖を含む、請求項1に記載の発酵乳。
- 前記糖類は前記発酵乳100重量部基準、5〜20重量部で含まれる、請求項1に記載の発酵乳。
- 前記発酵乳は前記発酵乳100重量部に対して80〜95重量部の牛乳をさらに含む、請求項1に記載の発酵乳。
- 乳酸菌培養物にアルロース含有糖類を添加するステップを含む発酵乳の貯蔵性を増加させる方法であって、
前記アルロースは乾燥固形分基準、前記糖類100重量部に対して70重量部以上で含有される、方法。 - 前記貯蔵性の増加はpH低下の抑制、酸度増加の抑制、酸味増加の抑制、後発酵の抑制または前記微生物の生育抑制によるものである、請求項10に記載の方法。
- 前記乳酸菌はラクトバチルス属微生物、ビフィドバクテリウム属微生物及びストレプトコッカス属微生物からなる群から選択される1種以上の微生物である、請求項10に記載の方法。
- アルロース含有糖類を含む、ラクトバチルスアシドフィルス、ラクトバチルスメセンテロイデス、ラクトバチルスガセリ、ラクトバチルスデルブリッキー、ラクトバチルスラムノーサス、ラクトバチルスブレビス、ラクトバチルスサリバリウス、ラクトバチルスプラタラム、ビフィドバクテリウムラクティス及びストレプトコッカスサーモフィルスからなる群から選択される1種以上の微生物の、生育抑制剤。
- 前記アルロースは乾燥固形分基準、前記糖類100重量部に対して70重量部以上で含有される、請求項13に記載の生育抑制剤。
