Claims (12)
1. Metoda za detoksifikaciju proteina glutena iz zrnja žitarica, naznačena sljedećim fazama:
A. hidracija zrnja žitarica vodom, koja se izvodi u vremenskom okviru između 30 minuta i 3 sata, upotrebom 500 ml vode za svakih 100 grama zrnja;
B. uklanjanje vode iz zrnja žitarica;
C. mikrovalno tretiranje zrnja žitarica, koje se izvodi u vremenskom okviru između jedne i tri minute, upotrebom snage između 750 i 1500 vata;
D. hlađenje zrnja žitarica.
2. Metoda za detoksifikaciju proteina glutena prema zahtjevu 1 naznačena time što je vremenski okvir koraka A otprilike jedan sat.
3. Metoda za detoksifikaciju proteina glutena prema zahtjevu 1 naznačena time što je vremenski interval dvije minute, a upotrijebljena snaga jest 1000 vata.
4. Metoda za detoksifikaciju proteina glutena prema zahtjevu 1 naznačena time što se faza hlađenja zrnja izvodi na temperaturi između 18°C i 24°C.
5. Metoda prema bilo kojem od prethodnih zahtjeva, pri čemu je zrnje žitarica odabrano između pšenice, ječma i zobi.
6. Zrnje odabrano iz grupe pšenice, ječma i zobi, koje se može dobiti prema metodi kako je definirano zahtjevima 1-5, naznačeno time što je detoksificirano od toksičnih epitopa glutena.
7. Proizvod koji se može dobiti od zrnja iz zahtjeva 6, odabran iz grupe koju čine krupica, brašna, proizvodi namijenjeni doručku, pivo.
8. Zrnje i proizvodi prema zahtjevima 6-7 za upotrebu u svrhu prehrane ljudi oboljelih od celijakije.
9. Upotreba pšenice prema zahtjevu 6 za proizvodnju krupice i brašna namijenjenih ljudima oboljelim od celijakije te ljudima koji pate od bolesti diabetes mellitus tip 1.
10. Upotreba ječma prema zahtjevu 6 za proizvodnju piva koje ne sadrži toksični hordein.
11. Upotreba zobi prema zahtjevu 6 za proizvodnju proizvoda koji ne sadrže toksični avenin.
12. Upotreba brašna prema zahtjevu 7, za pripremu prehrambenih proizvoda prikladnih za ljude oboljele od celijakije, koji su ekvivalentni, po okusu i izgledu, prehrambenim proizvodima koji se uobičajeno koriste u mediteranskoj prehrani.
