Abstract
Винахід стосується способу детоксифікації глютенових білків у зернах злаків, що включає етапи, на яких а) проводять гідратацію зерен злаків водою протягом відрізка часу від 30 хвилин до 3 годин, застосовуючи 500 мл води на кожні 100 г зерен, в) видаляють воду із зерен злаків, с) проводять мікрохвильове обробляння зерен протягом відрізка часу від однієї до трьох хвилин, застосовуючи потужність від 750 до 1500 Вт, d) охолоджують зерна злаків. Спосіб дозволяє одержувати детоксифіковане від глютену борошно для виготовлення продуктів, придатних для хворих на целіакію.
