Description
新型鱼酱的加工方法技术领域[0001] 本发明涉及一种鱼酱加工方法,特别涉及一种添加有鱼骨泥的鱼酱的加工方法, 属于食品加工技术领域。背景技术[0002] 我国是一个鱼类养殖和加工大国,鱼类资源丰富。鱼类食品被公认是一种优质的 保健食品,它富含蛋白质,并且其蛋白质易被人体消化吸收。在鱼类养殖和捕捞资源中, 有相当一部分是低值鱼类和小规格鱼类,如海洋捕捞中的小鱼、小虾及水产品加工下脚料 一般占捕获物的28%。由于缺乏综合加工利用技术的深入研究,目前低值鱼类及水产副 产品主要用于生产鱼粉等低附加值产品,甚至部分作为废物直接丢弃,不仅导致资源浪 费、产品附加值低,而且造成海洋、陆地环境的严重污染。发明内容[0003] 本发明的目的在于提供一种新型鱼酱的加工方法,其能够实现对低值鱼类水产品 的充分利用,并获得具有良好口感和营养价值的食品,从而克服了现有技术中的不足。[0004] 为实现上述发明目的,本发明采用了如下技术方案:一种新型鱼酱的加工方法,包括:将低值鱼经清理后,以取肉机取肉,并将所获鱼肉进 行脱腥处理,同时将余留带肉骨架粉碎制成骨肉泥,然后将所获鱼骨泥与脱腥后鱼肉混合 油炸成型,之后进行熬制,获得目标产品。[0005] 进一步的,该加工方法可包括如下步骤:(1)将新鲜低值鱼依次进行清洗、去头、去尾和去内脏处理,而后放入取肉机取肉;(2)将步骤(I)所获鱼肉于温度低于10°C的脱腥液中浸泡10-150min ;(3)将余留的带肉鱼骨架和鱼刺先切成尺寸小于2 cmX 2 cm的小块,冷冻至-20°C以 下后,先粗粉碎至20目以下,之后细粉碎至80目以下,最后超细微粉碎至100目以下,形成 鱼骨泥;(4)将重量比为10:1-10:6的步骤(2)所获鱼肉和步骤(3)所获鱼骨泥与面粉混合,而 后油炸成型,油炸温度为150°C至190°C,油炸时间为10-80s,获得油炸鱼肉丁 ;(5)取食用植物油加热,将油炸鱼肉丁、黄豆酱、香辛料和调味料混合,在可控温油炸 锅中进行熬制,熬制温度120-190°C,10_50min,获得鱼酱。[0006] 作为较为优选的实施方案之一,步骤(2)中所述脱腥液包含水、I wt%_8wt%食盐、0.1 wt%-0.5 wt% 柠檬酸以及 0.lwt%-0.7wt% 的 50 度白酒。[0007] 作为较为优选的实施方案之一,步骤(5)中是5-30重量份的油炸鱼肉丁、5-30重 量份的辣油和5-30重量份的黄豆酱混合进行熬制。[0008] 作为较为优选的实施方案之一,该加工方法还包括如下步骤:(6)将熬好的鱼酱装罐杀菌,杀菌温度为121°C,时间为20min。[0009] 与现有技术相比,本发明至少具有如下有益效果:(1)通过将低值鱼类和小规格鱼类(亦可统称为低值鱼类)加工成鱼酱,解决了低值鱼 类主要存在的肌间刺多,难以食用的缺点,也可以解决小规格鱼类难以加工的困难,实现低 值鱼类的充分利用,有利于环保;(2)通过将取肉后的带肉鱼骨架、鱼刺等加工成骨泥添加入鱼酱,能有效增加鱼酱的营 养成分;(3)通过将鱼肉和鱼骨泥混合油炸后熬制的方式,使得所获鱼酱味道鲜香,口感细腻, 且在无需添加防腐剂的情况下还具较长保质期;(4)本发明方法工艺简单,成本低廉,适于工业化规模生产的需求。附图说明[0010] 图1是本发明一典型实施方案中一种新型鱼酱加工工艺流程图。具体实施方式[0011] 如前所述,鉴于现有技术中的不足,本发明提供了一种新型的鱼酱加工方法,其技 术要点在于:将低值鱼经取肉机取肉,再将鱼肉脱腥,而剩下的带肉骨架要经过不同的粉 碎阶段,制成骨肉泥,然后再与脱腥后鱼肉混合油炸成型,保证鱼肉和骨肉泥混合物成型之 后,再进行熬制,继而获得鱼酱,其流程请参阅图1。[0012] 在本发明的一较为典型的实施方案中,该鱼酱加工方法可以包括如下步骤:1.新鲜低值鱼或小规格鱼清洗,去头、去尾、去内脏,放入取肉机取肉。[0013] 2.取下鱼肉进入脱腥液浸泡,处理液由水、食盐(lwt%_8wt%,以下若非特别说明, 均为wt%)、柠檬酸(0.1%-0.5%)、50度白酒组成(0.1%-0.7%),浸泡时间为10_150min,温度 低于IO0C0[0014] 3.带肉鱼骨架、鱼刺先切成小块(尺寸小于2 cmX 2 cm),冷冻至_20°C以下,粗粉 碎机粉碎至20目,之后加水,进入胶体磨细粉碎至80目,最后用采用高精密湿法超细粉碎 机进行微粉碎至100目,此时骨泥为骨和骨架上附带的肉的混合物,该骨泥口感细腻,手感光滑。[0015] 4.取肉后鱼肉不成易型,与骨泥混合后更不易成型。故将二者混合后(肉:骨泥为 10:1至10:6),与面粉混合(鱼肉骨:面粉为100:1至10:1)后油炸成型。油炸温度为150°c 至190°C,油炸时间为10-80S。[0016] 5.食用植物油加热,将油炸后的鱼肉丁、黄豆酱、盐、辣椒、姜等按比例混合,在 可控温油炸锅中进行熬制,熬制温度120-190°C,10-50min。鱼肉骨量为总量的5%_30%,辣 油用量为5%-30%,黄豆酱比例为5%-30%,其他调味料按不同口味加入,水适量。[0017] 6.熬好的鱼酱装罐杀菌,杀菌温度约121°C,时间约20min。[0018] 以下结合若干较佳实施例对本发明的技术方案作进一步的说明。[0019] 实施例11.新鲜低值鱼或小规格鱼清洗,去头、去尾、去内脏,放入取肉机取肉。[0020] 2.取下鱼肉进入脱腥液浸泡,处理液由水、食盐(1%)、柠檬酸(0.5%)、50度白酒组 成(0.7%),浸泡时间为lOOmin,温度低于10。。。[0021] 3.带肉鱼骨架、鱼刺先切成小块(尺寸小于2 cmX 2 cm),冷冻至_20°C以下,粗粉碎机粉碎至20目,之后加水,进入胶体磨细粉碎至80目,最后用采用高精密湿法超细粉碎 机进行微粉碎至100目。此时骨泥为骨和骨架上附带的肉的混合物,该骨泥口感细腻,手感光滑。[0022] 4.取肉后鱼肉不成易型,与骨泥混合后更不易成型。故将二者混合后(肉:骨泥为 IO:1 ),与面粉混合(鱼肉骨:面粉为IO:1)后油炸成型。油炸温度为150°C,油炸时间为80S。[0023] 5.食用植物油加热,将油炸后的鱼肉丁、黄豆酱、盐、辣椒、姜等按比例混合,在 可控温油炸锅中进行熬制,熬制温度120°C,50min。鱼肉骨量为总量的30%,辣油用量为 20%,黄豆酱比例为10%,其他调味料按不同口味加入,水适量。[0024] 6.熬好的鱼酱装罐杀菌,杀菌温度为121 °C,时间为20min。[0025] 实施例21.新鲜低值鱼或小规格鱼清洗,去头、去尾、去内脏,放入取肉机取肉。[0026] 2.取下鱼肉进入脱腥液浸泡,处理液由水、食盐(8%)、柠檬酸(0.1%)、50度白酒组 成(0.1%),浸泡时间为lOmin,温度低于10。。。[0027] 3.带肉鱼骨架、鱼刺先切成小块(尺寸小于2 cmX 2 cm),冷冻至_20°C以下,粗粉 碎机粉碎至20目,之后加水,进入胶体磨细粉碎至80目,最后用采用高精密湿法超细粉碎 机进行微粉碎至100目。此时骨泥为骨和骨架上附带的肉的混合物,该骨泥口感细腻,手感光滑。[0028] 4.取肉后鱼肉不成易型,与骨泥混合后更不易成型。故将二者混合后(肉:骨泥为 10:6),与面粉混合(鱼肉骨:面粉为100:1)后油炸成型。油炸温度为190°C,油炸时间为 10S。[0029] 5.食用植物油加热,将油炸后的鱼肉丁、黄豆酱、盐、辣椒、姜等按比例混合,在 可控温油炸锅中进行熬制,熬制温度190°C,10min。鱼肉骨量为总量的5%,辣油用量为 30%,黄豆酱比例为30%,其他调味料按不同口味加入,水适量。[0030] 6.熬好的鱼酱装罐杀菌,杀菌温度为121 °C,时间为20min。[0031] 实施例31.新鲜低值鱼或小规格鱼清洗,去头、去尾、去内脏,放入取肉机取肉。[0032] 2.取下鱼肉进入脱腥液浸泡,处理液由水、食盐(5%)、柠檬酸(0.2%)、50度白酒组 成(0.57%),浸泡时间为30min,温度低于10。。。[0033] 3.带肉鱼骨架、鱼刺先切成小块(尺寸小于2 cmX 2 cm),冷冻至_20°C以下,粗粉 碎机粉碎至20目,之后加水,进入胶体磨细粉碎至80目,最后用采用高精密湿法超细粉碎 机进行微粉碎至100目。此时骨泥为骨和骨架上附带的肉的混合物,该骨泥口感细腻,手感光滑。[0034] 4.取肉后鱼肉不成易型,与骨泥混合后更不易成型。故将二者混合后(肉:骨泥为 10:3),与面粉混合(鱼肉骨:面粉为100:8)后油炸成型。油炸温度为170°C,油炸时间为 20S。[0035] 5.食用植物油加热,将油炸后的鱼肉丁、黄豆酱、盐、辣椒、姜等按比例混合,在 可控温油炸锅中进行熬制,熬制温度150°C,30min。鱼肉骨量为总量的20%,辣油用量为 20%,黄豆酱比例为20%,其他调味料按不同口味加入,水适量。[0036] 6.熬好的鱼酱装罐杀菌,杀菌温度为121 °C,时间为20min。[0037] 需要指出的是,以上实施例仅供说明本发明之用,而非对本发明的限制,有关技术 领域的技术人员,在不脱离本发明的精神和范围的情况下,所作出各种变换或变型,均属于 本发明的范畴。
