一种具有低脂和食疗作用的烤鸭及其制备方法
技术领域
[0001] 本发明属食品类,涉及烤鸭的制备与处理,尤其是一种具有低脂和食疗作用的烤 鸭及其制备方法。
[0002] 技术背景
[0003] 目前,鸭的加工食品多种多样,如北京全聚德挂炉烤鸭、便宜坊焖炉烤鸭、浙江嘉 兴酱鸭、南京桂花板鸭、盐水鸭等,虽口味、加工方法各不相同,但普遍存在以下问题:
[0004] 1、加工工艺粗糙,鸭血及鸭腹腔内膜不能去除,漂洗不干净。
[0005] 2、富含脂肪,油腻性强,营养不合理。
[0006] 3、功能单一,仅满足食用基本需要,不具有多重、复合功能。
[0007] 4、不能实现规模化工业生产,产品不便储藏不易携带。
[0008] 本发明的目的在于避免上述现有技术中的不足之处,提供一种干净卫生、脂肪含 量低、具有食疗作用和可产业化大规模生产的烤鸭的制作工艺。
发明内容
[0009] 本发明将食疗与烤鸭食品有机结合,制成具有食疗保健作用、同时具有低脂含量 的烤鸭。
[0010] 本发明通过以下步骤实现本发明目的:
[0011] 1.宰杀,准备白条鸭。
[0012] 1)活鸭宰杀前让鸭休息2-3小时,并适当喂些清水,约50-100ml,目的提高活鸭血 液循环,从而提高产品质量;
[0013] 2)洗净鸭身,宰杀后将鸭血放尽,清除鸭毛,内脏及内脏膜;
[0014] 3)鸭胚用清水漂洗,取出晾干。
[0015] 本步骤也可以直接使用市售的白条鸭。
[0016] 2.腌制
[0017] 放入腌制液中浸泡3-5小时,每隔0. 5-1. 5小时翻动一次,取出晾干。
[0018] 本发明使用的腌制液可以是任意现有技术中制作烤鸭所使用的腌制液。腌制是食 物的初步加工方法,既去除了鸭子的腥气,浸泡液的成分也能更好地浸入鸭肉内,发挥腌制 液的药用功效。
[0019] 3.填料与蒸制
[0020] 所谓填料,是指鸭腌渍晾干以后,把已经炒熟的各种鲜料填入鸡腹内。填料可以选 多种,如用猪肉丝和大葱丝,或填入多种原料,如鸡腌片、鸡肝片、虾仁、猪肉丝、冬菜、葱丝 等。不过应当注意:填入的原料都先要经过煸炒调味,待炒熟并基本收干汤汁后,方可以使 用。填料时,原料应从鸭腋开口处塞入鸭腹,并将剩余的味汁也灌进去。优选向鸭体的膛中 塞入具有特定药效的中药填充物(即任意具有明确药疗效果的中药)。填充物的量以刚好 塞满鸭膛,没有空隙为限。将填充好的鸭胚用新鲜洗净的荷叶包裹,置于蒸锅上,蒸制0. 5-2 小时,取出放凉。[0021] 鸭胚在烤制之前,预先进行蒸制。蒸制时,蒸笼中的湿度达到最大饱和,菜肴本身 的水分不会像油加热那样大量蒸发,湿热的穿透力可将鸭外皮的腌制液带到鸭肉内,使鸭 的味道更好。
[0022] 4.烤制
[0023] 去掉荷叶,再次用新鲜荷叶重新包裹鸭体,用细麻绳包紧,包上锡纸,最后裹上酒 坛泥,泥的厚度为1-1. 5cm。将其置于烤炉,采用旺火-文火-文火的三步骤烘烤法,具体温 度与烤制时间如下:旺火(220-2800C )烤30-50分钟,文火(150_180°C )烤10-30分钟,翻 转鸭体,文火(100-150°C)再烤30-90分钟。烤制结束,既可直接食用,或冷却置室温至成 品包装中。
[0024] 采用此先旺火烤制30-50分钟,再用文火烤制60-100分钟,最后再用文火烤制 30-60分钟的分阶段烤制步骤。旺火使泥定型,文火使鸭子逐渐变熟,不至烤糊,而且腌制液 渐入鸭体,更入味。
[0025] 取出成品,并进成品房冷却至室温。即可食用或置于成品包装中。
[0026] 如上文中所述的作为本发明原料的鸭,选自动物学分类中属于雁形目鸭科下的动 物,优选其中可食用的鸭子,例如北京鸭、樱桃谷鸭、法国番鸭、奥白星鸭、金定鸭、绍兴鸭、 高邮鸭等,更优选樱桃谷鸭,进一步优选樱桃谷瘦型鸭。最优选市售的通过屠宰加工生产线 加工而成的樱桃谷瘦型鸭的白条鸭,例如正大集团出售的樱桃谷瘦型鸭的白条鸭。这样可 以有效地避免人畜共患病,如禽流感的传播,保证食客的安全。
[0027] 此外,作为本发明原料的鸭还可以用鸡、鹅、鸽子、兔、鹌鹑等体型与鸭子相当的可 食用动物代替,其制备工艺与鸭子基本类似。优选鸡、鹅、鸽子、鹌鹑。
[0028] 或者,作为本发明原料的鸭还可以用较大型可食用动物(例如猪、羊、牛等)的小 体型品种(如巴马香猪、小型羔羊等)代替,其制备工艺需要先将动物的外皮剥去,然后按 照与本发明基本类似的工艺制备。
[0029] 本发明中采用的腌制液,其配方是经过长期不断操作筛选出的最佳方案,选用的 药材,全部是天然的中草药。腌制液可以选用各种制备烤鸭的常规腌制液,例如CN1589656 中记载的配方。
[0030] 优选本发明使用的腌制液是取下列配方的配料放入1公斤黄酒中浸泡得到:
[0031] 丁香 l_5g、豆蔻 4-8g、小茴 6-10g、大茴 10_14g、桂皮 10_20g、花椒 6_10g、生姜 17-30g、葱 12-20g、陈皮 5-15g ;
[0032] 进一步优选,丁香3g、豆蔻6g、小茴Sg、大茴12g、桂皮15g、花椒Sg、生姜22g、葱 16g、陈皮 10g。
[0033] 各组分的功效如下:
[0034] 丁香:温中降逆,治胃寒之呃逆呕吐。
[0035] 豆蔻:增进胃肠蠕动,祛除肠胃积气,有良好的芳香健胃作用。
[0036] 小茴和大茴:散寒止痛,理气和中,治脘腹胀痛,呕吐少食
[0037] 桂皮:散寒止痛,温经通脉。
[0038] 花椒:散寒止痛,也可治虫积腹痛。
[0039] 生姜:味辛温,温肺止咳,解毒散寒。
[0040] 葱:去腥接腻[0041 ] 陈皮:理气健脾,燥湿化痰。
[0042] 鸭胚浸泡在腌制液中的时间为3-5小时,每隔0. 5-1小时翻动一次;优选,浸泡在 腌制液中的时间为4小时,每隔1小时翻动一次。
[0043] 本发明中的填充物的选择可以是任意具有特定中药疗效的中药粉末。优选具有传 统风味、养颜补血和滋补壮阳的中药。
[0044] 其中,填充物制法如下:
[0045] 传统风味:各种食用菇的熟制品。
[0046] 养颜补血:红花3_9g,桃仁5-10g,大枣10_30g粉碎,用蜂蜜15_30g腌制,在与山 药1500g同蒸,半熟后备用。
[0047] 滋补壮阳:韭子5-10g,山药1 500g,同煮至半熟后备用。
[0048] 填充物以塞满鸭膛为适。
[0049] 将填充好的鸭胚用新鲜洗净的荷叶包裹,置于蒸锅上,蒸制0. 5-2小时。其中荷叶 亦可食用芭蕉叶代替。优选蒸制1小时。
[0050] 目前,使用的烤炉可分为烧果木的砖砌炉,烧煤气的手动烤炉和电烤炉,后两种 对操作者的技术水平要求较高和劳动强度较大。电烤炉虽解决了卫生问题,但耗电较大, 致使其难以在烤鸭行业中推广。本发明优选使用以果木为燃料的砖砌炉,如CN2173908、 CN2204490、CN223051U CN2640245等文献中公开的烤鸭炉。
[0051] 本发明优选使用的燃料为燃烧时无烟的各种燃料,优选使用果木、麦秆等干柴。
[0052] 本发明中的旺火,指的是较高温度的加热,一般为220-280度,文火,指的是较低 温度的加热,一般为150度到180度;这些对于本领域技术人员来说是熟知的。
[0053] 本发明公开的技术方案中的“酒坛泥”,是一种用来烧制酒坛的胶泥。本发明公开 的技术方案中的“酒坛泥”亦可以用在制作叫化子鸡中所使用的泥来代替。
[0054] 本发明技术方案中所使用的包装为食品工业中使用的各种包装,优选无菌真空包 装。
[0055] 按照本发明技术方案制备的烤鸭,在出炉后,即可食用,可以配发面小荷叶饼、葱、 酱、酸黄瓜、柠檬等一起食用。
[0056] 本发明的有益效果是:
[0057] —、本发明的工艺,可以以工业化规模进行,克服了传统的烤鸭加工复杂、参数难 以控制,产品质量不一致等缺陷。本发明的操作工艺,温度、时间等参数可以严格控制,得到 的产品品质均一;且本工艺较传统烤鸭加工工艺,较为简便,也避免了不必要的步骤及其相 应的污染及成本;因制作工艺科学化、简单化,可以进行流水线作业,为规模化工业生产提 供了条件。本发明的工艺一次可以烤制10只以上,可降低了烤鸭成本55%。按照本发明工 艺制作出来的产品,既具有传统烤鸭的色、香、味等感官指标,而且由于本发明的特定工艺, 使本发明的产品具有更优良的特定口感,较传统烤鸭风味有了更大提高;并且,本发明的产 品还具有一定的医疗保健功效;此外,本发明的产品能在一定时间内保存,色、香、味、医疗 保健作用等理化指标不会降低,而且开袋即食,携带方便。
[0058] 二、本发明的技术方案不但保持了传统的烤鸭风味,炉内温度高,每只鸭子比传统 方法多出2-3市两鸭油,而且本发明产品口感肥腻感低于传统烤鸭,具有更良好的风味。可 参见下文的具体实施例。[0059] 三、除具有药膳食品的一般疗效特点外,将鸭肉(可根据市场和消费者的不同需 要选择不同日龄的鸭肉以适应肉质鲜嫩的程度)自身的疗效与中草药有机结合,既保证了 食品的物理属性,又扩大了药疗的范围;

[0066] 将上述丁香、豆蔻、小茴、大茴、桂皮、花椒、生姜、葱、陈皮等调料,按其重量配比研 磨成粗粉,过80目筛,并浸泡在黄酒中,室温存放3-6天,备用。

[0068] ①挑选上等优质的鸭1只,屠宰、去毛、去五脏、洗净、淋干,
[0069] ②将鸭体放入腌制液中浸泡4小时,每隔1小时翻动一次,取出晾干。
[0070] ③向鸭膛中塞入具有特定药效的中药填充物。填充物的量以刚好塞满鸭膛,没有 空隙为限。将填充好的鸭胚用新鲜洗净的荷叶包裹,置于蒸锅上,蒸制1小时。取出,晾凉。 其中填料为养颜补血的中药组合物,即将红花3_9g,桃仁5-10g,大枣10_30g粉碎,用蜂蜜 15-30g腌制,在与山药1500g同蒸,半熟后备用。

Claims (8)
- 一种具有食疗作用的烤鸭,其特征在于通过以下方法制备:将白条鸭放入腌制液中浸泡3-5小时;向鸭体中填料,置于蒸锅中蒸0.5-1.5小时,取出,晾凉;将鸭体由里向外分别用新鲜荷叶、锡纸和酒坛泥包裹;将包裹后的鸭体置于烤炉中,采用旺火-文火-文火三阶段烘烤,具体温度与烤制时间如下:旺火烤30-50分钟,文火烤10-30分钟,翻转鸭体,文火再烤30-90分钟;烤制结束,冷却至室温,即得成品;其中腌制液通过下列方法制备:将以重量计丁香1-5份、豆蔻4-8份、小茴6-10份、大茴10-14份、桂皮10-20份、花椒6-10份、生姜17-30份、葱12-20份、陈皮5-15份,研磨成粗粉,过80目筛,并浸泡在黄酒中,室温存放3-6天,备用;其中鸭体内的填料为任意具有药理活性的中药组合物。
- 2.如权利要求1所述的烤鸭,其特征在于白条鸭放入腌制液中浸泡4小时。
- 3.如权利要求1所述的烤鸭,其特征在于鸭体中塞入中药填充物后,置于蒸锅中蒸1小时。
- 4.如权利要求1所述的烤鸭,其特征在于将包裹后的鸭体置于烤炉中,具体温度与烤 制时间如下:旺火烤40分钟,文火烤20分钟,翻转鸭体,文火再烤1小时。
- 5.如权利要求1所述的烤鸭,其特征在于腌制液中各种组分的重量份数比为:丁香3 份、豆蔻6份、小茴8份、大茴12份、桂皮15份、花椒8份、生姜22份、葱16份、陈皮10份。
- 6.如权利要求1所述的烤鸭,其特征在于填料为传统风味的中药组合物,即各种食用 菇的熟制品。
- 7.如权利要求1所述的烤鸭,其特征在于填料为养颜补血的中药组合物,即将红花 3_9g,桃仁5-10g,大枣10_30g粉碎,用蜂蜜15-30g腌制,在与山药1500g同蒸,半熟后备用。
