Abstract

processo para preparar produtos alimenticios substitutos de carne, pasta para preparar produtos alimentícios substitutos de carne, processo para prepamr uma pasta, e, produto alimentício substituto de carne cozido um processo para preparar produtos alimentícios substitutos de carne, o processo compreendendo as etapas de hidratar sob vácuo pelo menos uma proteína vegetal misturada com água e pelo menos um corante; misturar pelo menos um produto de carne com a mistura de proteína vegetal hidratada e colorida; misturar unidades aromatizantes e unidades texturizadas à mistura de produtos de carne e proteína vegetal hidratada e colorida obtendo-se uma pasta preparada; cozer a referida pasta preparada; e formar referida pasta cozida para dar apresentação similar a um produto de carne. o produto alimentício substituto de carne obtido de acordo com a invenção pode apresentar uma aparência, por exemplo, de bife, escalope a milanesa, bife de flanco, carne curada, escalope a milanesa empanado, bife de flanco empanado, escalope, carne desfibrada, carne moída, grumos de carne, lâminas de carne ou almôndegas.
