Abstract

【課題】高齢者および咀嚼・嚥下困難者に適した食材を提供する。 【解決手段】素材に酵素を含浸させて酵素処理を行うことで、素材の自然な形状や色調を保持しながら、口腔内においては歯茎や舌で押しつぶされる軟らかさを有し、かつ滑らかな食感を有する、圧縮応力が直径3mmのプランジャーで圧縮速度10mm/秒、クリアランスを試料の厚さ30%として測定した際に5×104N/m2以下である、当該食材を得た。
