Abstract

Det er tilveiebrakt en intermolekylær forbindelse av (a) di-mettede middelskjedede fettsyrer mono-mettet langkjedet fettsyre triglycerid og (b) 1,3-di-mettede langkjedede fettsyrer 2-mono-umettet langkjedet fettsyre triglycerid, hvorav en lang gitter avstandsverdi ved røntgendiffraksjon er 65Å eller mer, og næringsmidlet inneholdende den intermolekylære forbindelsen. Den intermolekylære forbindelsen kan anvendes som en del av fett og oljer som utgjør næringsmidlet. På grunn av dannelsen av den intermolekylære forbindelsen kan fettet og oljene som inneholder store mengder av symmetrisk triglycerider, så som kakaosmør og de inneholdende fettsyrer av middels kjedelengde ikke danner separate krystaller og kan derfor opprettholde glatt tekstur og forhindre utsvetting.
