Claims (20)
- 調理用組立体であって、
a.調理槽を支持するための上側表面と、前記上側表面の下方に配置された一つあるいは複数の誘導加熱コイルと、前記一つあるいは複数の誘導加熱コイルの通電に応答する制御装置とを有する誘導加熱ベース、
b.前記誘導加熱ベースの前記上側表面によって支持されるべく適合された底部と、そこから上方に延びて縁部で終端する実質的に垂直な側壁とを有し、前記側壁が前記底部を囲んで流体を保持できる内側部分を形成している調理槽、
c.ガスケットによりその縁部において前記調理槽と係合するべく適合されてそれと共に真空シールを形成する蓋であり、その表面に形成された少なくとも一つの密封可能な貫通部分を有している蓋、
d.前記蓋に着脱自在に支持係合されると共に前記制御装置と信号通信するべく適合された通信装置であり、前記蓋の前記密封可能な貫通部分を介して前記槽の内部に入る熱量検出器を有している通信装置、を備え、
e.前記プログラム可能な制御装置は、前記制御装置に入力されている予め定められた温度を維持すべく、前記熱検知器により測定された温度に応答して、前記一つあるいは複数の電磁誘導コイルに通電しかつ通電を止めるように作動し、
f.前記ガスケット及び前記蓋の前記密封可能な貫通部分は、前記槽の内側部分の内側における少なくとも部分的な真空及び大気圧より高い圧力のうちの少なくとも一つを維持するように適合されており、
g.前記調理用組立体は、前記調理槽の内部の空気の分圧を0.3バール以下に低下させる手段、
を含んでいる調理用組立体。 - 前記調理槽の内部の空気の分圧を0.3バール以下に低下させるための手段が、少なくとも前記熱検知器が華氏約200度の温度を検出するまで最初に前記電磁誘導コイルに通電するプログラム可能な制御装置である、請求項1に記載の調理用組立体。
- 前記通信機は有線あるいは無線である、請求項1に記載の調理用組立体。
- 前記プログラム可能な制御装置は、第1の予め定められた温度に達したという前記通信機からの信号を受信した後の算出時間に応じて前記電磁誘導コイルへの通電を止めるように作動し、前記第1の温度に達した時点は、前記算出時間を決定するために用いられる、請求項1に記載の調理用組立体。
- 前記算出時間は、前記算出時間において前記電磁誘導コイルの通電を止めた後に前記蓋と前記縁部との間に前記ガスケットを介して真空シールが形成されるように、前記槽から空気を排出すべく作動する量の水蒸気を製造するのに十分である、請求項4に記載の調理用組立体。
- 前記槽から空気を排出するように作動する量の水蒸気を製造するのに十分である前記算出時間は、少なくとも約94度に達するまでの時間から、60秒を差し引き、次いで2で除算した時間である、請求項5に記載の調理用組立体。
- 前記通信機は、無線であり、かつ時間に対する温度の変化に基づいて送信時間を算出するためのプロセッサを有している、請求項1に記載の調理用組立体。
- 前記蓋は、前記蓋の前記密封可能な貫通部分を囲む環状の取手を更に有しており、かつ前記通信機は、前記環状の取手の内側環状部の内部に入れ子となるように適合されており、前記熱検知器は、着脱自在なグロメットを介して前記密封可能な貫通部分を貫通して密封する、請求項1に記載の調理用組立体。
- 調理用組立体であって、
a.底部と、そこから上方に延びて縁部で終端する実質的に垂直な側壁とを有し、前記側壁が前記底部を囲んで流体を保持できる内側部分を形成している調理槽、
b.前記槽の内部に真空を形成する密封手段、
c.前記調理槽との熱的な連通をもたらすための加熱手段、
d.前記加熱手段の出力を調整する制御装置、
e.前記槽の少なくとも一部あるいはその周囲の温度を測定すべく適合されている熱検知器、
f.前記熱検知器の出力を受信すると共にその値を前記制御装置に送信すべく適合されている通信装置、を備え、
g.前記プログラム可能な制御装置は、前記制御装置に入力されている予め定められた温度を維持すべく、前記通信装置によって測定された温度に応答して、前記一つあるいは複数の電磁誘導コイルに通電しかつ通電を止めるように作動し、
h.前記調理用組立体は、前記真空密封槽の内部の空気の分圧を0.3バール以下に低下させる手段、
を含んでいる調理用組立体。 - 前記密封手段はガスケット及び蓋であり、かつ前記ガスケットは前記槽の縁部の一部に係合するのに適合されている、請求項9に記載の調理用組立体。
- 前記槽の内部に延びる前記熱検知器によって閉じられる前記蓋の密封可能な貫通部分を更に備えている、請求項10に記載の調理用組立体。
- 前記蓋の前記ガスケット及び前記密封可能な貫通部分は、前記槽の内側部分の内側における少なくとも部分的な真空及び大気圧より高い圧力を維持するように作動する、請求項11に記載の調理用組立体。

- 前記ガスケットはF形であり、かつ前記縁部の下方の前記槽の側壁の側壁部分が、前記槽の内部に真空が形成されたときに前記F形ガスケットの複数の部分に接触する曲線部分を有している、請求項12に記載の調理用組立体。
- 調理方法であって、
a) その縁部と密封可能に係合する蓋を有した、その内部に流体を保持できる槽をもたらす段階、
b) 水と水性流体のうちの少なくとも一つを前記槽の内部に導入する段階、
c) 前記槽の内部に食品を配置する段階、
d) 前記蓋を前記槽の上に配置する段階、
e) 前記槽の大気内容物を置き換えるのに充分な量の水蒸気へと、少なくとも前記水が転換するまで、前記槽を第1の温度に加熱する段階、
f)前記第1の温度より低い前記第2の温度に前記槽をもたらすべく、前記槽に対する火力を低下させる段階であり、前記槽の内部の水蒸気の凝縮が、前記蓋を前記槽の前記縁部に係合させて密封するのに十分な内部減圧を生じさせる段階、
g)前記槽を第2の温度に予め定められた時間を維持する段階、
を含む方法。 - 前記第1の温度に加熱する段階は前記槽の下方の放射熱源によるものである、請求項15に記載の調理方法。
- 前記放射熱源が誘導調理ベースである、請求項15に記載の調理方法。
- 前記蓋が前記槽の内部の温度を測定する手段を更に有しており、前記槽を第2の温度に維持する段階は、一連の間隔を開けた電力パルスを前記誘導調理ベースに適用することを更に含み、各パルスによる最大温度上昇が温度測定手段によって測定され、前記第1の温度からの測定された差異によってそれぞれの次のパルスの電力が決定される、請求項17に記載の調理方法。
- 前記蓋が前記槽の内部の温度を測定する手段を更に有しており、かつ少なくとも前記水が前記槽の大気の容量を置き換えるのに十分な量の水蒸気に転換されるまで前記槽を第1の温度に加熱する段階を終了させるものは、予め定められた温度に達するまでの最初の時間から算出される時間である、請求項16に記載の調理方法。
- 前記予め定められた温度が少なくとも約94度であり、前記第1の温度への加熱を終了させる時間は、前記第1の温度から、60秒を差し引き、次いで2で除算したものである、請求項19に記載の調理方法。
