CONSISTE EN INCUBAR UNA SUSPENSION DE LA PROTEINA CON UN CULTIVO DE UN MICROORGANISMO DE GRADO ALIMENTICIO, CAPAZ DE PRODUCIR PEPTIDASAS QUE HIDROLIZAN LOS POLIPEPTIDOS DE SABOR AMARGO. EL MICROORGANISMO SE ELIGE ENTRE EL GRUPO DE LEVADURAS, MOHOS Y BACTERIAS, Y SE IMPACTA CON CALOR ANTES DE LA INCUBACION. LA INCUBACION SE LLEVA A CABO A 30 55GC, DURANTE 4-30 HORAS, A UN PH ENTRE 5,0 Y 7,5. EL PROCEDIMIENTO SE USA PARA OBTENER PROTEINAS HIDROLIZADAS Y DESAMARGADAS, AMPLIAMENTE UTILIZADAS EN LA INDUSTRIA ALIMENTICIA.
