Abstract

Se describe un proceso para la producción de proteínas hidrolizadas que no contengan un nivel detectable de monoclorodihidroxipropanol, que comprende: (a) el calentamiento de una proteína de calidad alimenticia en una solución acuosa de ácido diluido, a fin de desamidizarla; (b) la hidrolización de la proteína desamidizada en una solución acuosa, añadiéndole cuando menos una proteasa; y (c) la neutralización del desaminizado hidrolizado. Dicho proceso compende además la desodorización y decoloración del hidrolizado obtenido en el paso (c), y la concentración del mismo.
