Abstract

Fremgangsmåte for fremstilling av et vegetabilsk proteinhydrolysat, om- fattende anvendelse av et vegetabilsk proteinkonsentrat eller -isolat som startmateriale, og en kombinasjon av en ikke-pH-stathydrolyse til en høy hydro- lysegrad, etterfulgt av ultrafiltrer- ing. Fremgangsmåten tilveiebringer et vegetabilsk proteinhydrolysat med gode organoleptiske egenskaper, som kan fremstilles i forholdsvis høyt utbytte. Det således fremstilte vegetabilske proteinhydrolysat anvendes som et næringsmiddel.
