Abstract
Fremgangsmåte for produksjon av hydrolyserte vegetabilske proteiner som ikke inneholder noe påvisbart nivå av monoklor- dihydroksypropanol og har vesentlige aromaforbedrings- egenskaper ved å anvende enzymatisk hydrolyse av proteinet, fulgt av mild syrehydrolyse med saltsyre i gassform og produktet fra dette.
