发明背景
冰果子露制品是公知的,并且实际上是通常包含稳定剂如明胶或树胶的被冷冻、稀释和加甜的果汁。它们非常普及并且可以带有各种颜色和风味。它们可以模制成各种形状并且经常用棍支托。一种市售的模制冰果子露制品包含单个相对大的水果味树胶夹杂物,该夹杂物在填充前手工浇注在模具中。
为更加吸引消费者,期望有一种冰果子露制品,其中包含多个树胶或其它夹杂物,这些夹杂物可以具有不同颜色或风味来赋予冰果子露。我们发现了可以通过由水果送料器将树胶夹杂物自动分布到冰果子露混合料中来实现包含多个较小树胶夹杂物。因此该方法比将单个大的树胶夹杂物手工浇注到冰果子露混合料的劳动强度小。
发明概述
本发明提供一种冰糖食,该冰糖食内包含多个夹杂物。
发明详述
冰糖食可以是棒状,例如模制的棒并且如果需要可以是用棍支托的。棒的重量可以是例如20-100g,优选40-80g。[2.25oz=63.8g]。冰糖食可以是例如冰果子露、果汁冰水或果汁冰糕。冰糖食的风味可以是任何常规的用于冰糖食的风味,例如橙子、柠檬、酸橙、葡萄、樱桃味等。冰糖食可以是单独的含夹杂物冰糖食,也可以是夹心中含夹杂物的带外壳和夹心的制品。后者的外壳的厚度优选为2-4mm且外壳的长度优选为冰糖食总长度的20-50%。
夹杂物可以是例如树胶夹杂物、果仁、水果块、糖果或巧克力块。冰糖食中夹杂物的数量可以是2-16,优选4-12。各个夹杂物的最大尺寸优选是约1mL,优选小于0.65mL。各个夹杂物的特别优选的大小为0.2-0.5mL。夹杂物可以是任何希望的形状,如蝴蝶、两翼昆虫、幼虫的形状等。
当夹杂物是树胶夹杂物时,树胶夹杂物的树胶优选是明胶,也可以是任何其它适宜的树胶,如角叉菜胶、黄原胶、黄芪胶或琼脂。树胶夹杂物的其它成份可以包括玉米糖浆、糖、柠檬酸、乳酸、香料、着色剂、矿物油和巴西棕榈蜡(carnuba wax)等。树胶夹杂物可以是各种颜色,如橙色、红色、绿色,优选树胶夹杂物的颜色和冰糖食的颜色不同。树胶夹杂物的风味可以是例如樱桃、橙子、葡萄或酸橙味。
本发明还提供冰糖食的制备方法,其中冰糖食内含多个夹杂物,该方法包括通过水果送料器将夹杂物自动分布到冰混合料中。
在含多个树胶夹杂物的冰糖食的制作中,可以在通过水果送料器送到模具中的冰糖食混合料之前将树胶夹杂物通过冷冻剂制冷到-1℃至-2℃,优选-1.2℃至-1.5℃。温度应当是使树胶能够悬浮停留在冰糖食中。如果温度太高树胶浸渗,且如果温度太低,由于形成气泡而无法有效填充模具。水果送料器优选具有避免刮破树胶同时还防止树胶夹杂物粘在一起的送料螺旋,树胶粘在一起将导致堵塞管道和填充嘴。掺入树胶夹杂物之后,将冰糖食冷冻,例如在冷冻隧道、气流冷冻机中或通过液氮冷冻的方式,并且贮藏,优选在-25℃至-35℃下。
实施例
以下实施例进一步说明本发明。
将重量为60.92g的具有强的甜橙子味且用Color Pantone#150U染色的冰果子露混合料送到-1.3℃下的圆柱形模具中,冰果子露混合料的体积为58.57ml,所说模具的长度为60mm。将八份各自具有0.2-0.4mL体积的树胶夹杂物通过冷冻机冷冻到-1.3℃,并且由水果冷冻机通过螺旋装置分布到冰果子露中。树胶夹杂物包含明胶、玉米糖浆、糖、柠檬酸、乳酸、矿物油和巴西棕榈蜡,且每份分别用酸橙、葡萄或野樱桃味的任一香精调味并且染成绿色、紫色或红色的任一颜色。
给冰果子露加上棍,并且在冷冻隧道中冷冻至-30℃贮藏。

Claims (15)

1.一种冰糖食,该冰糖食中包含多个夹杂物。
2.根据权利要求1的冰糖食,其是模制的棒。
3.根据权利要求1的冰糖食,其是冰果子露、果汁冰水或果汁冰糕。
4.根据权利要求1的冰糖食,其中冰糖食是单独的含夹杂物的冰糖食。
5.根据权利要求1的冰糖食,其中冰糖食是夹心中含夹杂物的带外壳和夹心的制品。
6.根据权利要求5的冰糖食,其中外壳的厚度为2-4mm,且外壳的长度为冰糖食总长度的20-50%。
7.根据权利要求1的冰糖食,其中夹杂物可以是树胶夹杂物、果仁、水果块、糖果或巧克力块。
8.根据权利要求1的冰糖食,其中冰糖食中夹杂物的数量是2-16。
9.根据权利要求1的冰糖食,其中各个夹杂物的大小为0.2-0.5mL。
10.根据权利要求1的冰糖食,其中夹杂物是树胶夹杂物时,树胶夹杂物的树胶是明胶,树胶夹杂物的其它成份可以包括玉米糖浆、糖、柠檬酸、乳酸、香料、着色剂、矿物油和巴西棕榈蜡等。
11.根据权利要求10的冰糖食,其中树胶夹杂物的颜色和冰糖食的颜色不同。
12.一种制备内含多个夹杂物的冰糖食的方法,所说的方法包括通过水果送料器将夹杂物自动分布到冰混合料中。
13.根据权利要求12的方法,其中夹杂物是树胶夹杂物,在通过水果送料器送到模具中的冰糖食混合料中之前将树胶夹杂物通过冷冻机制冷到-1℃至-2℃。
14.根据权利要求13的方法,其中水果送料器具有避免刮破树胶同时还防止树胶夹杂物粘在一起的送料螺旋,树胶粘在一起将导致堵塞管道和填充嘴。
15.根据权利要求12的方法,其中在掺入夹杂物之后,将冰糖食冷冻并且贮藏。
