Abstract

PURPOSE:To prepare the objective ice cream having high shape-retainability, excellent palatability and good taste and flavor, by putting a large piece of fruit pulp to an ice cream layer, specifying the sugariness of the ice cream excluding the fruit pulp and, at the same time, including an insoluble solid component to the ice cream layer. CONSTITUTION:The objective ice cream has a structure composed of a 1st ice cream layer 1 containing a large piece of fruit pulp 1a and a 2nd ice cream layer 2 free from large piece of fruit pulp 1a and covering the outer circumference of the 1st ice cream layer 1. The sugariness of the fruit pulp piece 1a is set to 20-60 deg.C and the sugariness of the ice cream layer 1 excluding the fruit pulp piece 1a is set to 10-35 deg.. An insoluble solid component is included in a part of the ice cream layer 1 excluding the fruit pulp piece 1a. Preferably, said insoluble solid component is originated from fruit pulp puree and/or vegetable puree and the size of the fruit pulp piece 1a is 10-40mm.
