Abstract
本发明涉及一种食品加工方法,尤其是涉及一种巧克力夹心饼干制作方法及设备。其主要是解决现有技术所存在的饼干制造方法的自动化程度较差,工作效率较低,制造出来的饼干蛋白质含量较少,生产过程中容易碎裂,成品率较低等的技术问题。本发明将面粉、白砂糖、鸡蛋精、全脂奶粉、膨松剂加入足量的水混合后进行搅拌,然后成型成单片面糊送入到纠偏装置进行纠偏,将单片面糊送入到烘箱中进行烘烤,烘烤的温度为三段式,出炉后冷却成饼干本体;将饼干本体进行翻转,再在饼干本体上贴合巧克力层,然后在巧克力层上覆盖薄饼层,形成巧克力饼干,对巧克力饼干进行分离、横纵向整理,最后对巧克力饼干进行两次碾压。

[0002]目前,随着人们生活水平的提高,人们对食品质量越来越关注。巧克力含有丰富的多源苯酚复合物,这种苯酚复合物不单能防止巧克力本身脂肪腐化变酸,更能在被食入人体后,迅速给血管吸收,并很快积极作用为一种强有力的阻止LDL氧化及抑制血小板在血管中活动的抗氧化剂。中国专利公开了一种巧克力饼干及其制造方法(公开号:CN102406029A),其按重量百分比的组分包括:黑巧克力25%_40%;饼干粒25%_35%;白巧克力25%-40%;饼干粒置于黑巧克力层与白巧克力层之间;黑巧克力层按重量百分比的组分包括12%-20%的乳质;饼干粒包括重量组分比小于10%的植物油或动物油脂;一种饼干制造方法,其步骤为:(I)将白砂糖磨碎筛选后冷却待用,所用筛子为90-120孔/25.4mm的筛子;(2)将步骤(I)中所得白砂糖加入面筋含量为23%-25%的面粉搅拌15-25分钟后静置2-3小时发酵待用;(3)将步骤(2)所得的物料加工成型;(4)将步骤(3)制得的物料烘烤冷却制得饼干粒;一种黑巧克力制造方法,其步骤为:(I)将重量百分比为6%_15%的巧克力原料送入预精磨机进行研磨,将物料研磨至细度为130μηι-150μηι,再将所得物料送入精磨机进一步研磨,直至物料细度达到50μπι以下;(2)将步骤(I)所得物料送入精炼机中精炼,加入25%-40%所述非氢化油放置5-10分钟后进行搅拌5-8分钟;(3)将按重量百分比为12%-20%的奶粉加入步骤(2)所得物料中,4-8分钟后再加入25%-40%的白砂糖,4-8分钟后加入2%-5%融化的可可脂或代可可脂;(4)将步骤(3)所得物料精磨9-12小时后进行调温并送入保温罐进行保温储存。但是这种饼干制造方法的自动化程度较差,工作效率较低,制造出来的饼干蛋白质含量较少,生产过程中容易碎裂,成品率较低。

本发明的一种巧克力夹心饼干制作方法,其特征在于所述的方法包括:
a.将面粉、白砂糖、鸡蛋精、全脂奶粉、膨松剂加入足量的水混合后进行搅拌,然后成型成单片面糊送入到纠偏装置进行纠偏,其中各组成的重量百分比为:面粉47-55%、白砂糖15-17%、鸡蛋15-20%、全脂奶粉11-13%、膨松剂3-4%;
b.将单片面糊送入到烘箱中进行烘烤,烘烤的温度为三段式,第一段温度为150-190°C,第二段温度为255-300°C,第三段温度为170-220°C,出炉后冷却成饼干本体;
c.将饼干本体进行翻转,再在饼干本体上贴合巧克力层,巧克力层的组成及质量百分比为:白巧克力45-55%,可可粉10-15%,黑巧克力30-45%,然后再在巧克力层上覆盖薄饼层,形成巧克力饼干;
d.对巧克力饼干进行分离、横纵向整理,最后对巧克力饼干进行两次碾压即可出成品巧克力夹心饼干。
[0005] 本发明的饼干增加了鸡蛋的含量,并且在巧克力层中加入了可可粉,从而使得蛋白质含量较高。在烘烤时利用三段式温度烘烤,使得饼干在烘焙时其温度是逐渐升温再逐渐降温,这样对于其内部膨化有个渐进的过程,防止其在烘焙时由于温度膨胀不均,各组分之间会形成裂变,从而防止了饼干出炉后容易碎裂的弊端。
[0006]作为优选,所述的步骤b中的冷却为快速冷却,快速冷却为三段式,第一段温度为100-120 °C,冷却时间20-30s,第二段温度为50-80 °C,冷却时间10-20s,第三段温度为15-300C,冷却时间20-30s ο冷却分为三段式,并且冷却时间较短,这样通过三次温差较大的急速冷却,烘烤完成的饼干各组分即可进行渐进式地急速降温,一方面可以给予不同组分不同的降温幅度,从而保证其在降温过程中不会脆化碎裂,另一方面降温时间较短,可以防止饼干过度挥发。

a.将面粉、白砂糖、鸡蛋精、全脂奶粉、膨松剂加入足量的水混合后进行搅拌,然后成型成单片面糊送入到纠偏装置进行纠偏,其中各组成的重量为:面粉500斤、白砂糖16斤、鸡蛋18斤、全脂奶粉12斤、4斤;
b.将单片面糊送入到烘箱2中进行烘烤,烘烤的温度为三段式,第一段温度为180°C,第二段温度为280°C,第三段温度为200°C,出炉后冷却成饼干本体,其中冷却为快速冷却,快速冷却为三段式,第一段温度为110°C,冷却时间25s,第二段温度为70°C,冷却时间15s,第三段温度为18°C,冷却时间25s;
c.将饼干本体进行翻转,再在饼干本体上贴合巧克力层,巧克力层的组成为:白巧克力250斤,可可粉65斤,黑巧克力185斤,然后再在巧克力层上覆盖薄饼层,形成巧克力饼干;
d.对巧克力饼干进行分离、横纵向整理,最后对巧克力饼干进行两次碾压即可出成品巧克力夹心饼干。

1.一种巧克力夹心饼干制作方法,其特征在于所述的方法包括: a.将面粉、白砂糖、鸡蛋精、全脂奶粉、膨松剂加入足量的水混合后进行搅拌,然后成型成单片面糊送入到纠偏装置进行纠偏,其中各组成的重量百分比为:面粉47-55%、白砂糖15-17%、鸡蛋15-20%、全脂奶粉11-13%、膨松剂3-4%; b.将单片面糊送入到烘箱中进行烘烤,烘烤的温度为三段式,第一段温度为150-190°C,第二段温度为255-300°C,第三段温度为170-220°C,出炉后冷却成饼干本体; c.将饼干本体进行翻转,再在饼干本体上贴合巧克力层,巧克力层的组成及质量百分比为:白巧克力45-55%,可可粉10-15%,黑巧克力30-45%,然后再在巧克力层上覆盖薄饼层,形成巧克力饼干; d.对巧克力饼干进行分离、横纵向整理,最后对巧克力饼干进行两次碾压即可出成品巧克力夹心饼干。
2.根据权利要求1所述的一种巧克力夹心饼干制作方法,其特征在于所述的步骤b中的冷却为快速冷却,快速冷却为三段式,第一段温度为100-120°C,冷却时间20-30s,第二段温度为50-80°C,冷却时间10-20s,第三段温度为15-30°C,冷却时间20-30s。
3.一种巧克力夹心饼干制作设备,包括驱动装置(3),其特征在于所述的驱动装置(3)连接有可运送饼干料的传送带(4),传送带连接有纠偏装置(I),纠偏装置连接有烘箱(2),烘箱连接有可让饼干快速冷却的快速出炉装置(5),快速出炉装置依次连接有过渡输送线(6)、可将饼干翻转的翻转机构(7)、巧克力贴合机构(8)、薄饼贴合机构(9)、定位分离机构(10)、成品横纵向整理机构(11)、第一次碾压机构(12)、第二次碾压机构(13)。
4.根据权利要求3所述的一种巧克力夹心饼干制作设备,其特征在于所述的烘箱(2)的内壁与顶部都设有加热管(14),加热管都为螺旋形,螺旋形的加热管在箱体的内壁为横向设置,螺旋形的加热管在箱体的顶部为垂直设置,烘箱内部为三段式,相邻烘箱之间设有隔温层(15),第一段和第二段烘箱连接有排风机(16),烘箱的底部设有清洗装置(17),烘箱的顶部设有燃烧控制系统(18)。
5.根据权利要求3所述的一种巧克力夹心饼干制作设备,其特征在于所述的快速出炉装置(5)包括有U型的管道(19),管道内设有可运送饼干的输送带,管道的内壁上分布有冷凝管(20),管道分为三段式,相邻段管道之间设有隔板(21)。
6.根据权利要求3所述的一种巧克力夹心饼干制作设备,其特征在于所述的翻转机构(7)包括有上传送带(22),上传送带的端部设有V字形的翻转板(23),翻转板连接在转轴上,翻转板的前方设有下传送带(24)。
7.根据权利要求6所述的一种巧克力夹心饼干制作设备,其特征在于所述的翻转板(23)设置为一排多个,翻转板的两侧设有圆盘形的挡板(25),翻转板的前方设有倾斜设置的缓冲通道(26),缓冲通道的前方的下传送带(24)上设有若干挡条(27)。
8.根据权利要求3所述的一种巧克力夹心饼干制作设备,其特征在于所述的巧克力贴合机构(8)包括有可以输送巧克力层的横向输送带(28),横向输送带的输送方向与饼干的输送方向互相垂直设立,横向输送带的上方设有吸盘(29),吸盘为多个,其固定在可将巧克力层放置到饼干本体上的机械臂(30)上。
