目前市面上有很多品种的果酱,原料多以水果、蔬菜为主,如蓝莓果酱、苹果果酱、山楂果酱等,这类果酱以口感风味为主,大多使用了大量添加剂、香精、色素和防腐剂以弥补蒸煮加工过程中所损耗的色泽和香气。
近年来由于人们对生活品质的要求日益提高,对健康食品的需求越来越大。为适应市场需求,有越来越多的瓜果蔬菜制备的功效性果酱被研究并公开报道,有些已推出市场。比如申请号201310013827的中国专利公开了一种枸杞子果酱,含有枸杞子和菊花成分,具有保健功效且含糖量低;申请号200810234880.3的中国专利申请公开了一种仙人掌白果酱,含有仙人掌、白果,具有行气活血、清热解毒的作用;申请号200510062136.6的中国专利公开了一种黄秋葵果酱,不仅具有传统果酱具有的调味和营养功能,更具备抗疲劳、抗热应激等功效。
由于生活质量提高,饮食营养丰富,现代人们常会出现肥胖、高血压、高血糖等症状,而目前的果酱种类常含有较高糖分,或不具备减肥保健功效。因此研究一种风味独特、营养丰富且具有减肥功效的果酱,具有重要的现实意义及经济效益。

为了克服现有技术的缺点与不足,本发明的首要目的在于提供一种具有减肥功效的果酱,所述具有减肥功效的果酱风味独特、营养丰富,且具有减肥、降血压等保健功效;
本发明的另一目的在于提供上述具有减肥功效的果酱的制备方法。

一种具有减肥功效的果酱,包含以下重量份数的组分:
优选的,所述可食用芦荟为库拉索芦荟、中国芦荟、木立芦荟或开普芦荟中的一种以上;
优选的,所述具有减肥功效的果酱还包括增稠剂、香味剂、食用色素;
所述增稠剂为淀粉、海藻酸钠、黄原胶或果胶;

(3)将佛手瓜去除杂质和内核,用清水清洗,切碎,用打浆机制成佛手瓜浆,将佛手瓜浆加热煮制,煮制过程需搅拌,得到佛手瓜熟浆,备用;
(4)将黄秋葵浆、芦荟浆、刺角瓜浆及佛手瓜熟浆混合,煎煮成膏状,再加入蜂蜜、柠檬酸及木糖醇,中温混溶,然后投入调配罐搅拌均匀得到果酱粗成品;
(5)将果酱粗成品进行均质,然后脱氧处理,灌装后进行水浴杀菌,冷却所得产品即为所述具有减肥功效的果酱。
优选的,步骤(4)所述中温混溶的温度为40~50℃。
本发明各原料的功效如下:
黄秋葵,锦葵科秋葵属植物,又名羊角豆、洋芝麻、毛茄、补肾草等,黄秋葵根、茎、花、种子等均可入药,其性味甘、寒、滑,入心、肺、肾、肝及膀胱,可治脾虚乏力、肠燥便秘及恶疮、痈疖等病症。现代药理学研究证明黄秋葵多糖具有抗疲劳、健胃保肝、帮助消化、润肠通便、提供机体免疫力等保健功能。
可食用芦荟,包括库拉索芦荟、中国芦荟、木立芦荟和开普芦荟。芦荟为百合科芦荟属常绿草本植物,是一种古老而传统的常用植物及药物,主要功效泻火、解毒、化瘀、杀虫,主目赤、便秘、白浊、尿血、小儿惊痫、疳积、烧烫伤、妇女闭经、痔疮、疥疮、痈疖肿毒及跌打损伤,具有杀菌、抗炎、健胃下泄、强心活血及提高免疫力等作用。
刺角瓜,又名非洲角瓜、火参果、火天桃,葫芦科黄瓜属植物,一年生蔓性草本植物,表皮坚硬、凹凸不平,肉质细腻多籽,呈凝胶状,口味清甜,香味独特。刺角瓜富含维生素C和粗纤维,具有安神补脑、健心活血、排毒纤体的功效。
佛手瓜,又名安南瓜、寿瓜,葫芦科佛手瓜属植物,富含蛋白质、纤维素、维生素C、核黄素及钙、磷、铁、硒等微量元素,具有提高人体免疫力、利尿排钠、降血压、理气和中、疏肝止咳等功效。
本发明相对于现有技术具有如下的优点及效果:
(1)本发明果酱产品营养丰富、口感酸甜适宜,风味独特,老少皆宜。
(2)本发明果酱产品含有丰富的维生素、纤维素、矿物元素,能补充人体所需营养,提高人体免疫力。
(3)本发明果酱产品具有良好的降血压、降血脂、抗应激等保健功能。
(4)本发明果酱产品原料天然,无毒副作用。
(5)本发明制备方法简单,成本低,易于工业化推广。
具体实施方式
下面结合实施例对本发明作进一步详细的描述,但本发明的实施方式不限于此。
实施例1
一种具有减肥功效的果酱,包括以下重量份数的组分:

(1)将鲜嫩的黄秋葵和可食用芦荟分别洗净切碎,用打浆机制成黄秋葵浆和芦荟浆,备用;
(2)将刺角瓜去除外皮,将果肉放入打浆机打浆制成刺角瓜浆,备用;
(3)将佛手瓜去除杂质和内核,用清水清洗,切碎,用打浆机制成佛手瓜浆,将佛手瓜浆加热煮制,煮制过程需搅拌,得到佛手瓜熟浆,备用;
(4)将黄秋葵浆、芦荟浆、刺角瓜浆及佛手瓜熟浆混合,煎煮成膏状,再加入蜂蜜、柠檬酸、木糖醇及果胶,中温混溶,然后投入调配罐搅拌均匀得到果酱粗成品;
(5)将果酱粗成品进行均质,然后脱氧处理,灌装后进行水浴杀菌,冷却所得产品即为所述具有减肥功效的果酱。
实施例2
一种具有减肥功效的果酱,包括以下重量份数的组分:

(5)将果酱粗成品进行均质,然后脱氧处理,灌装后进行水浴杀菌,冷却所得产品即为所述具有减肥功效的果酱。

一种具有减肥功效的果酱,包括以下重量份数的组分:

1.一种具有减肥功效的果酱,其特征在于:包含以下重量份数的组分:

3.根据权利要求1所述的具有减肥功效的果酱,其特征在于:所述具有减肥功效的果酱还包括增稠剂、香味剂、食用色素。
4.根据权利要求3所述的具有减肥功效的果酱,其特征在于:所述增稠剂为淀粉、海藻酸钠、黄原胶或果胶。
5.根据权利要求3所述的具有减肥功效的果酱,其特征在于:所述香味剂为食用香精。
6.根据权利要求1~5任一项所述的具有减肥功效的果酱的制备方法,包括如下步骤:
(1)将鲜嫩的黄秋葵和可食用芦荟分别洗净切碎,用打浆机制成黄秋葵浆和芦荟浆,备用;
(2)将刺角瓜去除外皮,将果肉放入打浆机打浆制成刺角瓜浆,备用;
(3)将佛手瓜去除杂质和内核,用清水清洗,切碎,用打浆机制成佛手瓜浆,将佛手瓜浆加热煮制,煮制过程需搅拌,得到佛手瓜熟浆,备用;
(4)将黄秋葵浆、芦荟浆、刺角瓜浆及佛手瓜熟浆混合,煎煮成膏状,再加入蜂蜜、柠檬酸及木糖醇,中温混溶,然后投入调配罐搅拌均匀得到果酱粗成品;

7.根据权利要求6所述的具有减肥功效的果酱的制备方法,其特征在于:步骤(4)所述中温混溶的温度为40~50℃。
