本发明涉及一种补血养颜甲鱼粥及其加工方法,属于食品加工技术领域。
背景技术
甲鱼,又称鳖、团鱼、元鱼、乌龟、王八等,不但味道鲜美、高蛋白、低脂肪,而且是含有多种维生素和微量元素的滋补珍品,能够增强身体的抗病能力及调节人体的内分泌功能,也是提高母乳质量、增强婴儿的免疫力及智力的滋补佳品,因其具有较好的食用保健价值和较高的经济价值,而被人们青睐。
但是自古以来甲鱼除鲜活烹调或利用甲壳等部分入药外,甲鱼的深加工开发利用却无法跟上甲鱼人工养殖业的发展,为了增加甲鱼的食用范围,开阔甲鱼市场,提供一种营养丰富兼具良好保健功能的甲鱼食品,及简单易行的加工工艺,充分利用甲鱼的营养价值,满足人们对食品的营养保健需求。

本发明的目的在于提供一种补血养颜甲鱼粥及其加工方法。
本发明采用的技术方案如下:
一种补血养颜甲鱼粥,是由下述重量份的原料制成:
甲鱼300-400、橡子仁30-40、粳米80-100、养心菜15-20、红酒糟10-15、西番莲汁20-40、魔芋粉8-10、黄花菜粉10-13、银耳粉10-12、三七花2-3、玉美人1-3、黄精1-2、益母草2-3、过饥草1-3、玫瑰花1-3、甜酒10-20、食品添加剂6-10、草蔻1-3、胡椒粉0.5-1、食盐2-6、水适量;
所述的食品添加剂由下述重量份的原料制成:海木耳10-20、蒜泥15-20、黄秋葵10-15、兰香子4-6、马黛茶超微粉5-8、沙棘油适量;
所述的的食品添加剂的的加工方法为:将黄秋葵放入沸水焯烫1-2分钟,捞出与去根洗净海木耳一并破碎,加水煮沸,加入蒜泥、兰香子、马黛茶超微粉及适量沙棘油,搅拌均匀,文火熬制稠状,打制成浆,冷冻干燥研磨成粉,即可。
所述的补血养颜甲鱼粥的加工方法,包括以下步骤:
(1)、将甲鱼宰杀,除去内脏、黄油、血水,切块洗净,与红酒糟、胡椒粉、草蔻揉拌均匀,加入甲鱼重4-6倍的水煮制熟烂,捞出甲鱼块待用,过滤去渣,得甲鱼煮液;
(2)、将甲鱼块去骨,与魔芋粉、黄花菜粉、银耳粉、甜酒揉拌均匀,蒸制熟香,再烘干研磨成粉,得甲鱼肉粉;
(3)、将三七花、玉美人、黄精、玫瑰花等中药原料加4-6倍水煎煮1-3小时,过滤去渣,得煎煮液,将橡子仁、粳米分别除杂洗净混合,加入煎煮液,翻炒至微干;(4)、将翻炒橡子仁、粳米,再加入6-10倍水,煮制沸腾,加入甲鱼肉粉、甲鱼煮液及洗净除杂切制成末的鲜嫩养心菜,及其他剩余原料,翻搅均匀,文火继续焖煮至熟,即得。
本发明中过饥草归经—《泉州本草》:“入肝、脾、肾三经。”不仅具有养胃健脾、助消化的功效,还能当做香料使用;养心菜,也称救心菜。属蔷薇目,景天科。作用是养心、宁心、平肝、清热、活血,经常食用能有效治疗高血压和心脏病,并能保护肝脏。马黛茶是冬青科生木本植物大叶,马黛树一般株高3-6米,野生的可达20米,树叶翠绿,呈椭圆形,枝叶间开雪白小花,生长于南美洲。美洲人对这种叶子的处理方法和中国的茶叶相似,所以在中国把这种美洲特有的叶子称为马黛茶。

甲鱼400、橡子仁30、粳米100、养心菜20、红酒糟15、西番莲汁30、魔芋粉8、黄花菜粉12、银耳粉12、三七花2、玉美人3、黄精1、益母草3、过饥草2、玫瑰花3、甜酒20、食品添加剂10、草蔻2、胡椒粉1、食盐3、水适量;
所述的食品添加剂由下述重量(克)的原料制成:海木耳18、蒜泥15、黄秋葵15、兰香子5、马黛茶超微粉8、沙棘油适量;
所述的的食品添加剂的的加工方法为:将黄秋葵放入沸水焯烫1分钟,捞出与去根洗净海木耳一并破碎,加水煮沸,加入蒜泥、兰香子、马黛茶超微粉及适量沙棘油,搅拌均匀,文火熬制稠状,打制成浆,冷冻干燥研磨成粉,即可。
所述的补血养颜甲鱼粥的加工方法,包括以下步骤:
(1)、将甲鱼宰杀,除去内脏、黄油、血水,切块洗净,与红酒糟、胡椒粉、草蔻揉拌均匀,加入甲鱼重6倍的水煮制熟烂,捞出甲鱼块待用,过滤去渣,得甲鱼煮液;
(2)、将甲鱼块去骨,与魔芋粉、黄花菜粉、银耳粉、甜酒揉拌均匀,蒸制熟香,再烘干研磨成粉,得甲鱼肉粉;
(3)、将三七花、玉美人、黄精、玫瑰花等中药原料加5倍水煎煮3小时,过滤去渣,得煎煮液,将橡子仁、粳米分别除杂洗净混合,加入煎煮液,翻炒至微干;
(4)、将翻炒橡子仁、粳米,再加入10倍水,煮制沸腾,加入甲鱼肉粉、甲鱼煮液及洗净除杂切制成末的鲜嫩养心菜,及其他剩余原料,翻搅均匀,文火继续焖煮至熟,即得。

1.一种补血养颜甲鱼粥,其特征在于,是由下述重量份的原料制成: 甲鱼300-400、橡子仁30-40、粳米80-100、养心菜15-20、红酒糟10-15、西番莲汁20-40、魔芋粉8-10、黄花菜粉10-13、银耳粉10-12、三七花2-3、玉美人1-3、黄精1-2、益母草2-3、过饥草1-3、玫瑰花1-3、甜酒10-20、食品添加剂6-10、草蔻1-3、胡椒粉0.5-1、食盐2-6、水适量;
所述的食品添加剂由下述重量份的原料制成:海木耳10-20、蒜泥15-20、黄秋葵10-15、兰香子4-6、马黛茶超微粉5-8、沙棘油适量;

(4)、将翻炒橡子仁、粳米,再加入6-10倍水,煮制沸腾,加入甲鱼肉粉、甲鱼煮液及洗净除杂切制成末的鲜嫩养心菜,及其他剩余原料,翻搅均匀,文火继续焖煮至熟,即得。
