本发明公开了一种香椿花生酱及其制备方法,是由下述重量份的原料制成:嫩香椿茎叶30-40、花生仁20-25、土豆10-13、腰果5-8、黄瓜籽粉6-9、冰草1-2、知母1-2、金银花2-3、连翘1-2、榴莲花1-2、瓜子金2-3、辣椒酱10-20、山奈1-2、陈皮1-2、甘草1-2、食盐4-9、白酒8-12、植物油适量;本发明香椿花生酱,清香可口,咸香鲜辣,风味独特,含有香椿有益成分,可以补虚健胃,而黄瓜子成分有补钙壮骨、润肠通便的功效,还添加其他中药有益成分,协同作用,长食能提高食欲,身强骨壮,提高人体抗病能力。

技术领域
本发明涉及一种食品加工领域,尤其涉及一种香椿花生酱及其制备方法。
背景技术
花生果具有很高的营养价值,内含丰富的脂肪和蛋白质,还含有丰富的维生素及矿质元素,有促进脑细胞发育,增强记忆的功能。由花生仁为主原料加工得到的花生酱,因品质细腻,香气浓郁,是群众喜爱的香味调味品之一。
随着人们生活水平的提高,传统的花生酱因成分单一而影响其营养结构及口味,不能满足现代人对口味多样化,营养丰富化的要求,本发明提供一种香椿花生酱,风味独特,迎合人们的需求。
发明内容
本发明克服了现有技术不足,提供了一种香椿花生酱及其制备方法。
本发明是通过以下技术方案实现的:
一种香椿花生酱,由下述重量份的原料制成:
嫩香椿茎叶30-40、花生仁20-25、土豆10-13、腰果5-8、黄瓜籽粉6-9、冰草1-2、知母1-2、金银花2-3、连翘1-2、榴莲花1-2、瓜子金2-3、辣椒酱10-20、山奈1-2、陈皮1-2、甘草1-2、食盐4-9、白酒8-12、植物油适量。
所述的香椿花生酱的制备方法,包括以下步骤:
(1)、将嫩香椿茎叶在沸水漂烫6分钟,捞出在含有4-9%食醋的溶液浸泡至冷却,捞出冲洗沥干,在通风阴凉出摊晾1-2天,得干软香椿叶;
(2)、将冰草、知母、金银花、连翘、榴莲花、瓜子金合并破碎至40-80目,加5-12倍水,大火煮至沸腾,文火熬煮45-75分钟,过滤去渣,得煎煮液,冷却后与白酒搅拌均匀得药酒,将干软香椿茎叶切制成末,与其重量份的5-10%食盐、药酒搅拌均匀,入罐压实密封静置5-7天,待用;
(3)、将土豆去皮切块蒸熟烘干,与腰果分别研磨成粉,与黄瓜籽粉混合入锅文火炒制出香,得熟香粉,花生仁去衣入熟植物油锅内炒制出香,加入其它剩余原料及水覆盖花生仁2-3厘米,煮沸后文火焖煮30-40分钟,捞出花生仁,余液过滤去渣,滤液浓缩,得浓香液;
(4)、将步骤(2)静置物入锅文火焖微干,加入浓香液、辣椒酱、熟香粉、花生仁揉拌均匀,加揉拌物10-15%的纯净水,搅拌均匀,入蒸汽柜蒸制熟香,即得。

本发明香椿花生酱,清香可口,咸香鲜辣,风味独特,含有香椿有益成分,可以补虚健胃,而黄瓜子成分有补钙壮骨、润肠通便的功效,还添加其他中药有益成分,协同作用,长食能提高食欲,身强骨壮,提高人体抗病能力。
具体实施方式
下面结合实施例对本发明作进一步详细描述:
实施例:
一种香椿花生酱,由下述重量(斤)的原料制成:
嫩香椿茎叶40、花生仁25、土豆13、腰果8、黄瓜籽粉6、冰草2、知母2、金银花3、连翘1、榴莲花2、瓜子金2、辣椒酱20、山奈2、陈皮2、甘草2、食盐8、白酒12、植物油适量。
所述的香椿花生酱的制备方法,其特征在于包括以下步骤:
(1)、将嫩香椿茎叶在沸水漂烫6分钟,捞出在含有4-9%食醋的溶液浸泡至冷却,捞出冲洗沥干,在通风阴凉出摊晾2天,得干软香椿叶;
(2)、将冰草、知母、金银花、连翘、榴莲花、瓜子金合并破碎至80目,加8倍水,大火煮至沸腾,文火熬煮60分钟,过滤去渣,得煎煮液,冷却后与白酒搅拌均匀得药酒,将干软香椿茎叶切制成末,与其重量份的10%食盐、药酒搅拌均匀,入罐压实密封静置6天,待用;
(3)、将土豆去皮切块蒸熟烘干,与腰果分别研磨成粉,与黄瓜籽粉混合入锅文火炒制出香,得熟香粉,花生仁去衣入熟植物油锅内炒制出香,加入其它剩余原料及水覆盖花生仁3厘米,煮沸后文火焖煮40分钟,捞出花生仁,余液过滤去渣,滤液浓缩,得浓香液;
(4)、将步骤(2)静置物入锅文火焖微干,加入浓香液、辣椒酱、熟香粉、花生仁揉拌均匀,加揉拌物15%的纯净水,搅拌均匀,入蒸汽柜蒸制熟香,即得。
Claims (2)
1.一种香椿花生酱,其特征在于是由下述重量份的原料制成:
嫩香椿茎叶30-40、花生仁20-25、土豆10-13、腰果5-8、黄瓜籽粉6-9、冰草1-2、知母1-2、金银花2-3、连翘1-2、榴莲花1-2、瓜子金2-3、辣椒酱10-20、山奈1-2、陈皮1-2、甘草1-2、食盐4-9、白酒8-12、植物油适量。
2.一种如权利要求1所述的香椿花生酱的制备方法,其特征在于包括以下步骤:
(1)、将嫩香椿茎叶在沸水漂烫3-8分钟,捞出在含有4-9%食醋的溶液浸泡至冷却,捞出冲洗沥干,在通风阴凉出摊晾1-2天,得干软香椿叶;
(2)、将冰草、知母、金银花、连翘、榴莲花、瓜子金合并破碎至40-80目,加5-12倍水,大火煮至沸腾,文火熬煮45-75分钟,过滤去渣,得煎煮液,冷却后与白酒搅拌均匀得药酒,将干软香椿茎叶切制成末,与其重量份的5-10%食盐、药酒搅拌均匀,入罐压实密封静置5-7天,待用;
