但是自古以来甲鱼除鲜活烹调或利用甲壳等部分入药外,甲鱼的深加工开发利用却无法跟上甲鱼人工养殖业的发展,为了增加甲鱼的食用范围,开阔甲鱼市场,提供一种营养丰富兼具良好保健功能的甲鱼食品,及简单易行的加工工艺,充分利用甲鱼的营养价值,满足人们对食品的营养保健需求。

一种杞子团鱼汤圆,是由下述重量份的原料制成:
黑糯米80-120、芝麻菜8-15、黑土豆30-50、甲鱼肉80-100、香菇20-30、橡子粉30-50、藕粉20-40、余甘子粉6-10、枸杞子15-20、杜仲叶2-3、棒棒草1-2、蜀葵子1-2、绿百合2-3、菊芋1-2、薏仁油5-10、食盐3-6、米酒20-30、姜葱末10-15、食品添加剂6-10;
所述的食品添加剂由下述重量份的原料制成:海木耳10-20、蒜泥15-20、黄秋葵10-15、兰香子4-6、马黛茶超微粉5-8、沙棘油适量;
所述的的食品添加剂的的加工方法为:将黄秋葵放入沸水焯烫1-2分钟,捞出与去根洗净海木耳一并破碎,加水煮沸,加入蒜泥、兰香子、马黛茶超微粉及适量沙棘油,搅拌均匀,文火熬制稠状,打制成浆,冷冻干燥研磨成粉,即可。
所述的杞子团鱼汤圆的加工方法,包括以下步骤:
(1)、将黑土豆去皮切块洗净蒸熟,晒干研磨成粉,与余甘子粉、食品添加剂混合入锅,文火炒制出香,得营养粉;
(2)、将杜仲叶、棒棒草、蜀葵子、绿百合、菊芋破碎至20-40目,装入净纱布袋内封口,与除杂洗净的甲鱼肉、姜葱末、米酒一并入锅,加水没过甲鱼肉3-5厘米,焖煮1-2.5小时,捞出纱布袋沥干,捞出甲鱼肉沥干,压捣成糜,得肉糜,煮液待用;
(3)、将芝麻菜、香菇分别洗净切末,与枸杞子混合加入煮液,焖煮至稠状,加入营养粉、肉糜、食盐,揉拌均匀,即得汤圆馅料;
(4)、将黑糯米放入清水,在30-40℃浸泡4-6小时,在研磨成浆,抽滤脱水,得湿糯米粉,与其他剩余原料揉拌均匀,揉捏成面皮,以面皮:馅料的重量之比为 1:0.4-0.6 ,进行包馅制作,得到成型的汤圆,速冻、冷藏,即得。

所述的食品添加剂由下述重量(克)的原料制成:海木耳20、蒜泥20、黄秋葵15、兰香子6、马黛茶超微粉8、沙棘油适量;
所述的的食品添加剂的的加工方法为:将黄秋葵放入沸水焯烫2分钟,捞出与去根洗净海木耳一并破碎,加水煮沸,加入蒜泥、兰香子、马黛茶超微粉及适量沙棘油,搅拌均匀,文火熬制稠状,打制成浆,冷冻干燥研磨成粉,即可。

(4)、将黑糯米放入清水,在38℃浸泡5小时,在研磨成浆,抽滤脱水,得湿糯米粉,与其他剩余原料揉拌均匀,揉捏成面皮,以面皮:馅料的重量之比为 1:0.6 ,进行包馅制作,得到成型的汤圆,速冻、冷藏,即得。

所述的食品添加剂由下述重量份的原料制成:海木耳10-20、蒜泥15-20、黄秋葵10-15、兰香子4-6、马黛茶超微粉5-8、沙棘油适量;

(2)、将杜仲叶、棒棒草、蜀葵子、绿百合、菊芋破碎至20-40目,装入干净纱布袋内封口,与除杂洗净的甲鱼肉、姜葱末、米酒一并入锅,加水没过甲鱼肉3-5厘米,焖煮1-2.5小时,捞出纱布袋沥干,捞出甲鱼肉沥干,压捣成糜,得肉糜,煮液待用;
(3)、将芝麻菜、香菇分别洗净切末,与枸杞子混合加入煮液,焖煮至稠状,加入营养粉、肉糜、食盐,揉拌均匀,即得汤圆馅料;
(4)、将黑糯米放入清水,在30-40℃浸泡4-6小时,再研磨成浆,抽滤脱水,得湿糯米粉,与其他剩余原料揉拌均匀,揉捏成面皮,以面皮:馅料的重量之比为 1:0.4-0.6 ,进行包馅制作,得到成型的汤圆,速冻、冷藏,即得。
