Abstract
一种酱油风味小麦胚芽粉及其制备方法,其特征在于由下列重量份的原料制成:小麦胚芽450-500、麦冬1-1.5、蛇舌草2-2.5、鸡蛋花1.8-2.2、陈皮2.3-2.6、紫苏叶3-3.5、辣蓼草1-1.2、刺玫花1.3-1.5、梨肉8-9、奶糖4-5、酱油30-33、鸡汤40-50、香椿芽20-22、香菜10-12、芹菜14-17、营养添加剂4-5。本发明的小麦胚芽粉中添加了奶糖与酱油,其配比合理,使得本发明咸甜适中,由于添加了鸡汤,大大提升了本发明的营养价值,且使得本发明香味浓郁,鲜味十足,此外,本发明还具有润肺清心、理气健脾、活血养阴的功效,是一种绿色保健食品。

本发明属于食品加工技术领域,涉及一种小麦胚芽,尤其涉及一种酱油风味小麦胚芽粉及其制备方法。
背景技术
小麦胚芽是小麦中营养价值最高的部分,含丰富的维他命E、B1及蛋白质。现在市场上销售的有关小麦胚芽的产品口味品种少,且多不具有保健功能,已不能满足消费者日益增长的需求。
发明内容
本发明的目的是提供一种酱油风味小麦胚芽粉及其制备方法,本发明具有风味独特、营养丰富的特点。
本发明所采用的技术方案是:
一种酱油风味小麦胚芽粉,其特征在于由以下重量份的原料制成:
小麦胚芽450-500、麦冬1-1.5、蛇舌草2-2.5、鸡蛋花1.8-2.2、陈皮2.3-2.6、紫苏叶3-3.5、辣蓼草1-1.2、刺玫花1.3-1.5、梨肉8-9、奶糖4-5、酱油30-33、鸡汤40-50、香椿芽20-22、香菜10-12、芹菜14-17、营养添加剂4-5;
所述营养添加剂由下列重量份原料制成:薏仁油0.1-0.2、豆豉60-70、旋花根1-1.2、鸡冠花0.8-1、桑黄1.1-1.2、梨叶0.9-1、柚子皮4-5;
制备方法为:(1)将柚子皮加5-6倍的水打浆,在所得浆液中加入旋花根、鸡冠花、桑黄、梨叶密封浸泡3-4小时后过滤除渣,收集滤液;
(2)将豆豉与滤液混合送入锅中,小火炒香后出锅,烘干后粉碎,与剩余物料混合拌匀,即得。
所述的酱油风味小麦胚芽粉的制备方法,其特征在于包括以下步骤:
(1)将麦冬、蛇舌草、鸡蛋花、陈皮、紫苏叶、辣蓼草、刺玫花加5-6倍的水文火煎煮40-50分钟,过滤分离,得到药渣和药液,所得药液再经喷雾干燥制成粉末,得中药粉;
(2)将药渣置于酱油中密封浸泡3-4小时,过滤除渣,在所得滤液中加入奶糖,大火加热搅拌至奶糖完全融化,得保健酱油;
(3)将梨肉、香椿芽、香菜、芹菜混合,加鸡汤打浆,过滤除渣,得果蔬鸡汤;
(4)将小麦胚芽与保健酱油、果蔬鸡汤混合送入炒锅中,小火炒香后出锅,送入烘箱,待含水量降至7-8%时出料,进行粉碎,然后与中药粉及剩余物料混合拌匀,即得。
本发明的有益效果为:
本发明的小麦胚芽粉中添加了奶糖与酱油,其配比合理,使得本发明咸甜适中,由于添加了鸡汤,大大提升了本发明的营养价值,且使得本发明香味浓郁,鲜味十足,此外,本发明还具有润肺清心、理气健脾、活血养阴的功效,是一种绿色保健食品。
具体实施方式
一种酱油风味小麦胚芽粉,其特征在于由以下重量份(公斤)的原料制成:
小麦胚芽450、麦冬1.5、蛇舌草2.5、鸡蛋花2.2、陈皮2.6、紫苏叶3.5、辣蓼草1.2、刺玫花1.5、梨肉9、奶糖4、酱油33、鸡汤50、香椿芽22、香菜12、芹菜14、营养添加剂5;
所述营养添加剂由下列重量份(公斤)原料制成:薏仁油0.2、豆豉70、旋花根1、鸡冠花1、桑黄1.2、梨叶1、柚子皮5;
制备方法为:(1)将柚子皮加5-6倍的水打浆,在所得浆液中加入旋花根、鸡冠花、桑黄、梨叶密封浸泡3-4小时后过滤除渣,收集滤液;
(2)将豆豉与滤液混合送入锅中,小火炒香后出锅,烘干后粉碎,与剩余物料混合拌匀,即得。

1.一种酱油风味小麦胚芽粉,其特征在于由以下重量份的原料制成:
小麦胚芽450-500、麦冬1-1.5、蛇舌草2-2.5、鸡蛋花1.8-2.2、陈皮2.3-2.6、紫苏叶3-3.5、辣蓼草1-1.2、刺玫花1.3-1.5、梨肉8-9、奶糖4-5、酱油30-33、鸡汤40-50、香椿芽20-22、香菜10-12、芹菜14-17、营养添加剂4-5;
所述营养添加剂由下列重量份原料制成:薏仁油0.1-0.2、豆豉60-70、旋花根1-1.2、鸡冠花0.8-1、桑黄1.1-1.2、梨叶0.9-1、柚子皮4-5;
