本发明公开了一种麦香泡椒银鱼干,由以下重量份的原料制成:银鱼200-210、布福娜1-1.2、杜仲0.8-1、田基黄1-1.2、木香0.8-1.2、小麦10-15、虾皮3-4、黑芝麻1-2、腌椒2-3、猪肉10-15、鸡蛋5-6、毛豆米3-4、花豆2-3、柑橘2-3、柿子2-3、八角1-2、陈醋1-2、营养添加剂4-5;本发明的银鱼干营养丰富,添加的黑芝麻、虾皮、花豆等丰富了银鱼丸的口感,其中虾皮中含有丰富的蛋白质和矿物质,尤其是钙含量丰富,是缺钙者补钙的较佳途径,且虾皮具有补肾壮阳、理气开胃的作用,此外,本发明在加工过程中添加了多种中草药,具有行气活血、消肿止痛祛风除湿的功效。

本发明属于食品加工技术领域,涉及一种银鱼制品,尤其涉及一种麦香泡椒银鱼干及其制备方法。
背景技术
银鱼是中国名贵水产品之一,被视为席上珍品,在国内外久负盛名。餐桌上的银鱼吃法各异,但随着人们对食物要求的提高,单一银鱼的营养不能满足人们日渐增长的需要,为此在本发明内增添了各种营养物质来均衡人们的需求。
发明内容
本发明克服了现有技术中的不足,提供了一种麦香泡椒银鱼干及其制备方法。
本发明所采用的技术方案是:
一种麦香泡椒银鱼干,由以下重量份的原料制成:
银鱼200-210、布福娜1-1.2、杜仲0.8-1、田基黄1-1.2、木香0.8-1.2、小麦10-15、虾皮3-4、黑芝麻1-2、腌椒2-3 、猪肉10-15、鸡蛋5-6、毛豆米3-4、花豆2-3、柑橘2-3、柿子2-3、八角1-2、陈醋1-2、营养添加剂4-5;
所述营养添加剂由下列重量份的原料制成:刺五加叶1-2、当归叶1-1.2、杨梅叶0.8-1、白术1-1.3、人参叶1-2、紫米4-5、香草粉2-3、葡萄酒5-6、姜末1-2、猪肝10-15; 制备方法为:(1)将刺五加叶、当归叶、杨梅叶、白术、人参叶加4-5倍的水大火煎煮40-45分钟,压滤去渣,所得药液经喷雾干燥得药粉; (2)猪肝切成细条用水冲洗后泡入葡萄酒内浸泡30-40分钟后取出上笼屉蒸熟后加入姜末捣烂得猪肝泥; (3)将紫米入锅煮熟得紫米饭,将剩余葡萄酒及猪肝泥倒入紫米饭内拌匀并小火熬干,研磨得酒香紫米猪肝粉,再向酒香紫米猪肝粉内混入药粉和香草粉混合均匀,即得。
根据权利要求1所述的麦香泡椒银鱼干的制备方法,其特征在于包括以下步骤
(1)取新鲜活银鱼,放入1-2%的淡盐水内清养7-10小时,去除银鱼体内杂质,再取出宰杀洗净备用;
(2)将布福娜、杜仲、田基黄等中药加入4-5倍水,小火煎煮1-2小时后压滤去渣得中药液;将毛豆米和花豆混合打浆、虾皮烘干和黑芝麻混合磨粉、柑橘去皮和柿子榨汁;
(3)小麦入锅炒香盛出冷却备用;将猪肉入沸水内烫至5分熟,切成细丁放置于盆内,倒入陈醋、腌椒、八角浸泡1-2小时;取出猪肉丁烘干研磨的肉干粉,往肉干粉内倒入步骤(2)所得所有物料、营养添加剂及剩余各原料一起充分混合后小火熬至糊状得营养肉酱;
(4)将银鱼表面涂满营养果酱并在炒香的小麦内粘附一些麦粒,用力压扁后烘干即得。
本发明的有益效果为:
本发明的银鱼干营养丰富,添加的黑芝麻、虾皮、花豆等丰富了银鱼丸的口感,其中虾皮中含有丰富的蛋白质和矿物质,尤其是钙含量丰富,是缺钙者补钙的较佳途径,且虾皮具有补肾壮阳、理气开胃的作用,此外,本发明在加工过程中添加了多种中草药,具有行气活血、消肿止痛祛风除湿的功效。
具体实施方式
一种麦香泡椒银鱼干,由以下重量份(公斤)的原料制成:
银鱼200、布福娜1、杜仲0.8、田基黄1、木香0.8、小麦10、虾皮3、黑芝麻1、腌椒2 、猪肉10、鸡蛋5、毛豆米3、花豆2、柑橘2、柿子2、八角1、陈醋1、营养添加剂4;
所述营养添加剂由下列重量份(公斤)的原料制成:刺五加叶1、当归叶1、杨梅叶0.8、白术1、人参叶1、紫米4、香草粉2、葡萄酒5、姜末1、猪肝10; 制备方法为:(1)将刺五加叶、当归叶、杨梅叶、白术、人参叶加4倍的水大火煎煮40分钟,压滤去渣,所得药液经喷雾干燥得药粉; (2)猪肝切成细条用水冲洗后泡入葡萄酒内浸泡30分钟后取出上笼屉蒸熟后加入姜末捣烂得猪肝泥; (3)将紫米入锅煮熟得紫米饭,将剩余葡萄酒及猪肝泥倒入紫米饭内拌匀并小火熬干,研磨得酒香紫米猪肝粉,再向酒香紫米猪肝粉内混入药粉和香草粉混合均匀,即得。
根据权利要求1所述的麦香泡椒银鱼干的制备方法,其特征在于包括以下步骤
(1)取新鲜活银鱼,放入1-2%的淡盐水内清养7小时,去除银鱼体内杂质,再取出宰杀洗净备用;
(2)将布福娜、杜仲、田基黄等中药加入4倍水,小火煎煮1小时后压滤去渣得中药液;将毛豆米和花豆混合打浆、虾皮烘干和黑芝麻混合磨粉、柑橘去皮和柿子榨汁;
(3)小麦入锅炒香盛出冷却备用;将猪肉入沸水内烫至5分熟,切成细丁放置于盆内,倒入陈醋、腌椒、八角浸泡1小时;取出猪肉丁烘干研磨的肉干粉,往肉干粉内倒入步骤(2)所得所有物料、营养添加剂及剩余各原料一起充分混合后小火熬至糊状得营养肉酱;
(4)将银鱼表面涂满营养果酱并在炒香的小麦内粘附一些麦粒,用力压扁后烘干即得。

1.一种麦香泡椒银鱼干,其特征在于由以下重量份的原料制成:
银鱼200-210、布福娜1-1.2、杜仲0.8-1、田基黄1-1.2、木香0.8-1.2、小麦10-15、虾皮3-4、黑芝麻1-2、腌椒2-3 、猪肉10-15、鸡蛋5-6、毛豆米3-4、花豆2-3、柑橘2-3、柿子2-3、八角1-2、陈醋1-2、营养添加剂4-5;
