本发明公开了一种泡椒银鱼酱及其制备方法,是由下述重量份的原料制成:银鱼15-30、尖椒40-50、豆芽10-15、黄豆10-15、蜂蜜5-12、诺丽果8-13、龙眼肉10-15、燕麦粉5-8、豌豆粉8-10、春根藤1-2、千斤拨2-3、老君须1-2、石榴皮1-2、老鹳草1-2、九龙藤1-2、花生酱10-25、酱油3-6、红油4-9、食盐5-10、料酒8-12、米醋5-10、适量植物油;本发明泡椒银鱼酱,不但保留了银鱼原有营养和风味,还添加经发酵腌制的泡椒成分,增加酸辣口感同时更易消化,风味独特,同时增加中药保健成分,常食能兹强补壮,有益健康。

本发明涉及一种食品加工领域,尤其涉及一种泡椒银鱼酱及其制备方法。
背景技术
水产类包括各种海鱼、河鱼和其它各种水产动植物,如虾、蟹、蛤蜊、海参、海蜇和海带等。它们是蛋白质、无机盐和维生素的良好来源,味道也非常鲜美,是深受人们欢迎的饮食佳品。
随着生活水平的提高,人们对水产类的需求不仅仅满足于食用新鲜水产类组织,水产制品的加工的多样化越来越得到人们的关注,本发明提供一种泡椒银鱼酱,满足市场的需求。
发明内容
本发明克服了现有技术不足,提供了一种泡椒银鱼酱及其制备方法。
本发明是通过以下技术方案实现的:
一种泡椒银鱼酱,由下述重量份的原料制成:
银鱼15-30、尖椒40-50、豆芽10-15、黄豆10-15、蜂蜜5-12、诺丽果8-13、龙眼肉10-15、燕麦粉5-8、豌豆粉8-10、春根藤1-2、千斤拨2-3、老君须1-2、石榴皮1-2、老鹳草1-2、九龙藤1-2、花生酱10-25、酱油3-6、红油4-9、食盐5-10、料酒8-12、米醋5-10、适量植物油。
所述的泡椒银鱼酱的制备方法,包括以下步骤:
(1)、将黄豆除杂,在含有3-6%食盐的清水浸泡3-5小时,捞出冲洗沥干,与洗净切末豆芽混合,加0.5-2倍水研磨成浆,煮制沸腾15-30分钟,冷却至60-70℃加入蜂蜜搅匀,得浆液待用;
(2)、将诺丽果、龙眼肉分别洗净破碎,与浆液搅拌均匀,经均质、灭菌、冷却,接入2-3%的乳酸菌种,在 40 -50℃下发酵 3-6小时,当混合物料酸度达到 65-72°T时,停止发酵,过滤去渣,得发酵液,灭菌后,与洗净切末尖椒、食盐、红油搅拌均匀,入罐紧压密封静置10-15天,待用;
(3)、将春根藤、千斤拨、老君须、石榴皮、老鹳草、九龙藤合并破碎,得到颗粒加5-9倍水煎煮2-3小时,过滤去渣,滤液与料酒混匀,加入银鱼、米醋混匀,浸泡1-2小时,入锅文火焖煮至干,待用;
(4)、将步骤(2)静置物固液分离,滤液浓缩,待用,得酸辣液;固渣与炒制熟香燕麦粉、豌豆粉揉拌均匀,入熟油锅内煎炸熟香,捞出沥干余油,烘干研磨成粉,得泡椒粉;
(5)、将步骤(3)焖煮银鱼入熟油锅小火煎炒至微黄,加入酸辣液、泡椒粉及其它剩余原料翻炒均匀,加入水覆盖固状物2-3厘米,文火熬煮至固液比为1:0.6-0.8,即得。
与现有技术相比,本发明的优点是:
本发明泡椒银鱼酱,不但保留了银鱼原有营养和风味,还添加经发酵腌制的泡椒成分,增加酸辣口感同时更易消化,风味独特,同时增加中药保健成分,其中老君须可以健脾补肾、化毒,九龙藤有行气活血的功效,春根藤可以活血通络、舒筋壮骨,常食能兹强补壮,有益健康。
具体实施方式
下面结合实施例对本发明作进一步详细描述:
实施例:
一种泡椒银鱼酱,由下述重量(斤)的原料制成:
银鱼30、尖椒40、豆芽12、黄豆15、蜂蜜10、诺丽果10、龙眼肉15、燕麦粉6、豌豆粉10、春根藤2、千斤拨2、老君须2、石榴皮2、老鹳草2、九龙藤1、花生酱25、酱油5、红油4、食盐5、料酒12、米醋10、适量植物油。
所述的泡椒银鱼酱的制备方法,包括以下步骤:
(1)、将黄豆除杂,在含有6%食盐的清水浸泡5小时,捞出冲洗沥干,与洗净切末豆芽混合,加1倍水研磨成浆,煮制沸腾20分钟,冷却至70℃加入蜂蜜搅匀,得浆液待用;
(2)、将诺丽果、龙眼肉分别洗净破碎,与浆液搅拌均匀,经均质、灭菌、冷却,接入2%的乳酸菌种,在 50℃下发酵5小时,当混合物料酸度达到 72°T时,停止发酵,过滤去渣,得发酵液,灭菌后,与洗净切末尖椒、食盐、红油搅拌均匀,入罐紧压密封静置15天,待用;
(3)、将春根藤、千斤拨、老君须、石榴皮、老鹳草、九龙藤合并破碎,得到颗粒加7倍水煎煮3小时,过滤去渣,滤液与料酒混匀,加入银鱼、米醋混匀,浸泡2小时,入锅文火焖煮至干,待用;
(4)、将步骤(2)静置物固液分离,滤液浓缩,待用,得酸辣液;固渣与炒制熟香燕麦粉、豌豆粉揉拌均匀,入熟油锅内煎炸熟香,捞出沥干余油,烘干研磨成粉,得泡椒粉;
(5)、将步骤(3)焖煮银鱼入熟油锅小火煎炒至微黄,加入酸辣液、泡椒粉及其它剩余原料翻炒均匀,加入水覆盖固状物3厘米,文火熬煮至固液比为1:0.6,即得。

1.一种泡椒银鱼酱,其特征在于是由下述重量份的原料制成:
银鱼15-30、尖椒40-50、豆芽10-15、黄豆10-15、蜂蜜5-12、诺丽果8-13、龙眼肉10-15、燕麦粉5-8、豌豆粉8-10、春根藤1-2、千斤拨2-3、老君须1-2、石榴皮1-2、老鹳草1-2、九龙藤1-2、花生酱10-25、酱油3-6、红油4-9、食盐5-10、料酒8-12、米醋5-10、适量植物油。
2.一种如权利要求1所述的泡椒银鱼酱的制备方法,其特征在于包括以下步骤:
(1)、将黄豆除杂,在含有3-6%食盐的清水浸泡3-5小时,捞出冲洗沥干,与洗净切末豆芽混合,加0.5-2倍水研磨成浆,煮制沸腾15-30分钟,冷却至60-70℃加入蜂蜜搅匀,得浆液待用;
(2)、将诺丽果、龙眼肉分别洗净破碎,与浆液搅拌均匀,经均质、灭菌、冷却,接入2-3%的乳酸菌种,在 40 -50℃下发酵 3-6小时,当混合物料酸度达到 65-72°T时,停止发酵,过滤去渣,得发酵液,灭菌后,与洗净切末尖椒、食盐、红油搅拌均匀,入罐紧压密封静置10-15天,待用;
