2.根据权利要求1所述的一种海米驴肉丸的制备方法,其特征在于:包括以下步骤:
一、将丁香鱼用沸水煮10分钟,将丁香鱼煮软后捞起,沥干水份备用;
二、将海米用清水冲洗一下,然后放入温水中浸泡至软,备用;
三、将龙眼壳、槟榔花、绿茶、板栗叶、金露梅、功劳叶和灯心草混合,至液面高出物料8-10cm,煎煮60-80min,过滤得养生滤汁;
四、将大豆皮、麦麸、豆粕混合后研磨成粉,混合助剂加入到养生滤汁中,煮沸浓缩至汤汁变浓稠;
五、将萝卜叶切成小段,西瓜皮切成小块,再加入笋丝以及处理后的海米和丁香鱼,最后浇上浓稠汤汁后搅拌均匀,包裹到地瓜叶中,放在蒸锅上蒸煮2-3个小时,卸下地瓜叶,得到海米果蔬混合辅材;
六、最后,将驴肉块绞碎,并加入食盐、味精、姜粉、白醋、白胡椒粉、料酒和海米果蔬混合辅材,搅拌均匀,静置20-30分钟,加入成丸机中,调整丸子大小,将成型的丸子放入80-100°的热水中煮熟至漂起,将漂起的丸子放入冷水中冷却后,再急速冷却,得到驴肉丸。
