[0002] 银鱼是中国名贵水产品之一,被视为席上珍品,在国内外久负盛名。餐桌上的银鱼吃法各异,但随着人们对食物要求的提高,单一银鱼的营养不能满足人们日渐增长的需要,为此在本发明内增添了各种营养物质来均衡人们的需求。

一种风味牛骨银鱼干,由以下重量份的原料制成:
银鱼200-210、沙棘1-1.2、山茱萸1-1.3、菊苣1.1-1.3、黄芥子0.8_1、茉莉花茶渣0.7-0.9、鼠曲草0.9-1.1、牛骨20-25、猪蹄20-25、黄豆10-15、黑枣4-5、银耳4-5、水芹2-3、蒜苗1-2、香蕉6-7、料酒1-2、花生仁1_2、白醋1_2、营养添加剂4_5 ;
所述营养添加剂由下列重量份的原料制成:刺五加叶1-2、当归叶1-1.2、杨梅叶
0.8-1、白术1-1.3、人参叶1-2、紫米4-5、香草粉2-3、葡萄酒5-6、姜末1-2、猪肝10-15 ;制备方法为:(I)将刺五加叶、当归叶、杨梅叶、白术、人参叶加4-5倍的水大火煎煮40-45分钟,压滤去渣,所得药液经喷雾干燥得药粉;(2)猪肝切成细条用水冲洗后泡入葡萄酒内浸泡30-40分钟后取出上笼屉蒸熟后加入姜末捣烂得猪肝泥;(3)将紫米入锅煮熟得紫米饭,将剩余葡萄酒及猪肝泥倒入紫米饭内拌匀并小火熬干,研磨得酒香紫米猪肝粉,再向酒香紫米猪肝粉内混入药粉和香草粉混合均匀,即得。

(1)取新鲜活银鱼,放入1-2%的淡盐水内清养7-10小时,去除银鱼体内杂质,再取出宰杀洗净,将银鱼表面用针扎穿若干通孔,浸入料酒与白醋的混合液内2-3小时备用;
(2)将沙棘、山茱萸、菊苣等中药加入4-5倍水,小火煎煮1-2小时后压滤去渣得中药液;将蒜苗切碎末与黄豆、猪蹄、牛骨、黑枣、银耳、花生仁混合入锅内大火熬煮5-6小时,取出牛骨,待剩余混合物水分熬干后搅碎得猪蹄牛骨酱;
(3)将步骤(2)取出后的牛骨压碎与香蕉一起混合成泥状,小火熬膏研磨得牛骨粉;取水芹榨汁与猪蹄牛骨酱、中药液、营养添加剂及剩余各原料充分混合均匀得蘸面酱;
(4)取出浸泡后的银鱼,表面均匀涂抹步骤(3)所得蘸面酱后入蒸笼蒸熟,取出在表面撒上牛骨粉,冷却风干即得。

(3)将步骤(2)取出后的牛骨压碎与香蕉一起混合成泥状,小火熬膏研磨得牛骨粉;取水芹榨汁与猪蹄牛骨酱、中药液、营养添加剂及剩余各原料充分混合均匀得蘸面酱;
(4)取出浸泡后的银鱼,表面均匀涂抹步骤(3)所得蘸面酱后入蒸笼蒸熟,取出在表面撒上牛骨粉,冷却风干即得。
