Abstract
本发明涉及一种玫瑰复合果蔬汁发酵饮料及其制备方法,其由玫瑰花原浆、果汁、蔬菜汁、复配增稠稳定剂、甜味剂、食用香精、复合发酵剂按一定质量份组成,制备方法包括:配料、初加工果蔬汁饮料、复配增稠稳定剂调配、中加工果蔬汁饮料、最终调配果蔬汁饮料。本发明的有益效果是:以食用玫瑰花汁为主要原料,搭配各种果汁与蔬菜汁,经过科学处理后接种乳酸菌发酵,在微生物的作用下,提高果蔬汁氨基酸含量、合成新的维生素、有机酸、产生新的芳香成分,在获得丰富肠道益生菌的同时又能获得丰富的营养。

技术领域
本发明涉及饮料的技术领域,尤其是一种玫瑰复合果蔬汁发酵饮料及其制备方法。
背景技术
玫瑰花是药食同源的材料,花中含有三四百种营养物质,如原花色素、挥发性油、芳香醇、醛、不饱和黄酮等等。丰富的营养成分决定了玫瑰的食用价值。食用玫瑰制品能益气通血,养肝护胃,排毒养颜。玫瑰花富含蛋白质、纤维素、脂肪、维生素及多种氨基酸,还有丰富的常量和微量元素等人体必需的多种营养成分,其中的蛋白质含量高达16%,还有多种人体必需的微量元素,铁含量最高。玫瑰花应用在食品中,多以干花瓣入药或制成玫瑰花茶销售,随着对玫瑰花需求的不断增加,中国的玫瑰花加工制造技术水平不断更新,目前国内市场上已开始出现玫瑰花汁饮料,但利用乳酸菌发酵玫瑰饮料产品国内市场暂无此类产品。
乳酸菌是正常人畜肠道中极为重要的生理菌群,担负着人畜机体多种重要的生理功能,具有维持人体中微生态平衡的作用,与机体健康息息相关。经国内外的科学工作者研究表明,乳酸菌的保健作用主要表现在以下几点:维持消化道菌群微生态平衡;促进人体消化吸收;降低血清胆固醇;增强机体免疫功能;对肿瘤的抑制作用;延缓机体衰老等。植物乳杆菌是植物源乳酸发酵产品中提取的乳酸杆菌,相比较动物源乳酸杆菌,它具有更强的耐酸、耐胆盐特性,到达肠道的存活率是普通动物源乳酸杆菌的8倍,并且在无乳的纯植物发酵饮料中,植物乳杆菌产酸快,存活率高,更为适合。
在现有的非乳基的乳酸菌饮料加工技术中,有核桃等植物蛋白乳酸菌饮料、蔬菜汁等植物发酵乳酸菌饮料,目前暂无以食用玫瑰花等花材作为主要原料的乳酸菌饮料。
在乳酸菌饮料新产品发明专利中,申请号为200510026286.1的中国专利申请公开了一种名为“大豆花生核桃植物乳酸菌饮料的制备方法”,其主要是利用植物蛋白原料参与发酵制成;申请号为201210409328.X的中国专利申请公开了一种名为“一种发酵发芽糙米乳饮料的制备方法”;申请号为201210546489.3的中国专利公开了一种名为“一种复合蔬菜汁发酵饮料及其生产方法”,其主要是利用胡萝卜、冬瓜、黄瓜、卷心菜、西兰花和蒜苔等蔬菜为基料进行发酵制成。
在玫瑰饮料新产品发明专利中,申请号为200610069094.3、98109045.1、200710077699.1、01123598.5、200910205106.4等中国专利申请公开了一些玫瑰花饮料新产品技术,这些发明专利都是以玫瑰花为主要原料,调配其他辅料制成饮料,这些发明专利并未添加乳酸菌发酵剂进行发酵,只是调配饮料。
发明内容
本发明的目的是提供一种以玫瑰花为主的玫瑰复合果蔬汁发酵饮料及其制备方法。
为了完成上述目的,本发明采用的技术方案是:
一种玫瑰复合果蔬汁发酵饮料,所述的玫瑰复合果蔬汁发酵饮料,以1000份最终产品计,其包含以下质量份的各组分:玫瑰花汁20-200份,果汁1-50份,蔬菜汁1-30份,复配增稠稳定剂1-3份,甜味剂0.1-130份,食用香精0.03-2份,复合发酵剂为0.01-0.5份,其余为水。
所述的玫瑰复合果蔬汁发酵饮料,以1000份最终产品计,其包含以下质量份的各组分:玫瑰花汁40-100份,浓缩果汁1-20份,浓缩蔬菜汁1-20份,复配增稠稳定剂1-2.5份,甜味剂0.1-130份,食用香精0.03-2份,复合发酵剂为0.01-0.5份,其余为水。
所述的复配乳化增稠剂由原胶、结冷胶、瓜尔胶、果胶、羧甲基纤维素钠、三聚磷酸钠、六偏磷酸钠、异Vc钠原料配制而成,其中采用的重量比为1-30%的黄原胶、1-20%的结冷胶、1-30%的瓜尔胶、1-50%的果胶、5-80%的羧甲基纤维素钠、1-50%的三聚磷酸钠、1-50%的六偏磷酸钠、5-40%的异Vc钠。
所述的玫瑰花汁为玫瑰花鲜榨原汁/浆或玫瑰花浓缩汁/浆。
所述的果汁与蔬菜汁为浓缩果汁、浓缩蔬菜汁或原果汁/浆、原蔬菜汁/浆或由水果、蔬菜原料鲜榨而成。
所述的果汁为苹果汁、葡萄汁、石榴汁、桃汁、西瓜汁、草莓汁、柠檬汁、橙汁、芒果汁、木瓜汁、香蕉汁、梨汁、荔枝汁中的一种或两种以上;所述的蔬菜汁为番茄汁、胡萝卜汁、芹菜汁、菠菜汁、西兰花汁、白菜汁、青椒汁、冬瓜汁、西葫芦汁中的一种或两种以上。
所述的甜味剂为白砂糖、蔗糖、麦芽糖、葡萄糖、低聚糖、果糖、乳糖、三氯蔗糖、安赛蜜、阿斯巴甜或木糖醇中的一种或两种以上。
所述的食用香精为玫瑰香精、玫瑰茄香精、绿茶香精、红茶香精、苹果香精、葡萄香精、石榴香精、桃香精、西瓜香精、草莓香精、柠檬香精、橙香精、芒果香精、木瓜香精、香蕉香精、梨香精、荔枝香精中的一种或两种以上。
所述的复合发酵剂由保加利亚乳杆菌、嗜热链球菌、植物乳杆菌原料配制而成,其中采用的重量比为10-80%的保加利亚乳杆菌、10-80%的嗜热链球菌、10-50%的植物乳杆菌。
一种玫瑰复合果蔬汁发酵饮料的制备方法,包括以下步骤:
A、配料:按配方称取各成分,以1000份最终产品计,其包含以下质量份的各组分:玫瑰花汁20-200份,果汁1-50份,蔬菜汁1-30份,复配增稠稳定剂1-3份,甜味剂0.1-130份,食用香精0.03-2份,复合发酵剂为0.01-0.5份,其余为水,备用;
B、将玫瑰花汁、果汁、蔬菜汁按10%-90%浓度用水稀释混匀,得初加工果蔬汁,备用;
C、将复配增稠稳定剂和甜味剂混匀,用80-85℃热水剪切15-20min,充分溶解,降温至30℃以下,备用;
D、将步骤B和步骤C所得两部分料液混匀,定容,经过18-20Mpa均质一遍,再经过95℃、5min的高温杀菌,待降温至37-42℃后,接种复合发酵剂,经过35-42℃发酵16-18h后,得中加工果蔬汁,备用;
E、将经过步骤D发酵以后的中加工果蔬汁进行最终调配,添加食用香精后进行115-121℃的UHT超高温瞬时灭菌,在3-15s的杀菌后降温至35-50℃再进行无菌灌装、密封,即得所述玫瑰复合果蔬汁发酵饮料。

实施例1,一种玫瑰复合果蔬汁发酵饮料,以1000份最终产品计,其包含以下质量份的各组分:玫瑰花原浆40份,浓缩草莓汁5份,浓缩苹果汁5份,浓缩葡萄汁5份,浓缩番茄汁5份,浓缩胡萝卜汁5份,复配增稠稳定剂1份,甜味剂80份,食用香精0.05份,复合发酵剂为0.05份,其余为水。本实施例的玫瑰复合果蔬汁发酵饮料的制备方法包括如下步骤:
A、配料:按配方称取各成分,以1000份最终产品计,其包含以下质量份的各组分:玫瑰花原浆40份,浓缩草莓汁5份,浓缩苹果汁5份,浓缩葡萄汁5份,浓缩番茄汁5份,浓缩胡萝卜汁5份,复配增稠稳定剂1份,白砂糖80份,食用香精0.05份,复合发酵剂为0.05份,其余为水,备用;
B、将玫瑰花汁、果汁、蔬菜汁按10%浓度用水稀释混匀,得初加工果蔬汁饮料,备用;
C、将石家庄市兄弟伊兰食品配料有限公司生产的复配增稠稳定剂和白砂糖混匀,用80-85℃热水剪切15-20min,充分溶解,降温至30℃以下,备用;
D、将步骤B和步骤C所得两部分料液混匀,定容,经过18-20Mpa均质一遍,再经过95℃、5min的高温杀菌,待降温至37℃后,接种复合发酵剂,经过37℃发酵16-18h,得中加工果蔬汁饮料,备用;
E、将经过步骤D发酵以后的中加工果蔬汁进行最终调配,添加石家庄千幕食品科技有限公司生产的食用香精后进行115-121℃的UHT超高温瞬时灭菌,在3-15s的杀菌后降温至35-50℃再进行无菌灌装、密封,即得本发明玫瑰复合果蔬汁发酵饮料。
实施例2:本实施例的玫瑰复合果蔬汁发酵饮料,以1000份最终产品计,其包含以下质量份的各组分:玫瑰花原浆200份,浓缩葡萄汁10份,浓缩石榴汁10份,浓缩番茄汁10份,浓缩胡萝卜汁10份,复配增稠稳定剂2份,白砂糖50份,安赛蜜0.2份,食用香精0.5份,复合发酵剂为0.1份,其余为水。本实施例的玫瑰复合果蔬汁发酵饮料的制备方法包括如下步骤:
A、配料:按配方称取各成分,以1000份最终产品计,其包含以下质量份的各组分:玫瑰花原浆200份,浓缩葡萄汁10份,浓缩石榴汁10份,浓缩番茄汁10份,浓缩胡萝卜汁10份,复配增稠稳定剂2份,白砂糖50份,安赛蜜0.2份,食用香精0.5份,复合发酵剂为0.1份,其余为水,备用;
B、将玫瑰花汁、果汁、蔬菜汁按10%浓度用水稀释混匀,得初加工果蔬汁饮料,备用;
C、将石家庄市兄弟伊兰食品配料有限公司生产的复配增稠稳定剂和白砂糖混匀,用80-85℃热水剪切15-20min,充分溶解,降温至30℃以下,备用;
D、将步骤B和步骤C所得两部分料液混匀,定容,经过18-20Mpa均质一遍,再经过95℃、5min的高温杀菌,待降温至37℃后,接种复合发酵剂,经过37℃发酵16-18h,得中加工果蔬汁饮料,备用;

实施例3,本实施例的玫瑰复合果蔬汁发酵饮料,以1000份最终产品计,其包含以下质量份的各组分:玫瑰花浓缩汁20份,浓缩草莓汁3份,浓缩苹果汁5份,浓缩葡萄汁3份,浓缩石榴汁6份,浓缩番茄汁2份,浓缩胡萝卜汁1份,浓缩菠菜汁0.1份,浓缩芹菜汁0.1份,复配增稠稳定剂2份,白糖120份,食用香精0.6份,复合发酵剂为0.6份,其余为水。本实施例的玫瑰复合果蔬汁发酵饮料的制备方法包括如下步骤:
A、配料:按配方称取各成分,以1000份最终产品计,其包含以下质量份的各组分:玫瑰花浓缩汁20份,浓缩草莓汁3份,浓缩苹果汁5份,浓缩葡萄汁3份,浓缩石榴汁6份,浓缩番茄汁2份,浓缩胡萝卜汁1份,浓缩菠菜汁0.1份,浓缩芹菜汁0.1份,复配增稠稳定剂2份,白糖120份,食用香精0.6份,复合发酵剂为0.6份,其余为水,备用;
B、将玫瑰花汁、果汁、蔬菜汁按10%浓度用水稀释混匀,得初加工果蔬汁饮料,备用;
C、将石家庄市兄弟伊兰食品配料有限公司生产的复配增稠稳定剂和白砂糖混匀,用80-85℃热水剪切15-20min,充分溶解,降温至30℃以下,备用;

由于本发明以食用玫瑰花汁为主要原料,搭配各种果汁与蔬菜汁,经过科学处理后接种乳酸菌发酵,在微生物的作用下,提高果蔬汁氨基酸含量、合成新的维生素、有机酸、产生新的芳香成分,在获得丰富肠道益生菌的同时又能获得丰富的营养。
本发明所述玫瑰复合果蔬汁发酵饮料具有如下效果:
(1)本发明所述玫瑰复合果蔬汁发酵饮料玫瑰花原汁含量在10-50%,复合果蔬汁原汁含量在5-30%。
(2)本发明中的玫瑰花汁原料中含有丰富的花青素、挥发性油脂、黄酮类、多糖和多酚类物质,还含有各种维生素、生物碱、西游的亚油酸、氨基酸等等和膳食纤维、微量元素和蛋白质等,这些成分决定了玫瑰花具有极高的营养价值和药用价值,经常食用玫瑰制品能益气通血、养肝护胃、排毒养颜,令人神爽。
(3)本发明所述玫瑰复合果蔬汁发酵饮料,利用复合发酵剂的发酵作用,使得原有的营养成分得到了优化,并且用索氏提取、柱前衍生法、原子吸收法等方法分析发酵前后产品营养成分变化,明确量化各种营养素含量,并且利用气质联用仪检测方法分析发酵前后产品香气物质变化。
(4)本发明所述玫瑰复合果蔬汁发酵饮料在填补了国内乳酸菌发酵饮料市场空白的基础上,通过对植物乳杆菌的驯化、各菌株间比例的调整以及发酵起始条件的优化,使得果蔬汁发酵饮料发酵条件得到了拓宽,不再局限于原有乳酸菌发酵饮料发酵起始酸度的狭窄范围。

1.一种玫瑰复合果蔬汁发酵饮料,其特征在于:所述的玫瑰复合果蔬汁发酵饮料,以1000份最终产品计,其包含以下质量份的各原料:玫瑰花汁20-200份,果汁1-50份,蔬菜汁1-30份,复配增稠稳定剂1-3份,甜味剂0.1-130份,食用香精0.03-2份,复合发酵剂为0.01-0.5份,其余为水,所述的复配增稠稳定剂由黄原胶、结冷胶、瓜尔胶、果胶、羧甲基纤维素钠、三聚磷酸钠、六偏磷酸钠、异Vc钠原料配制而成,其中采用的重量比为1-30%的黄原胶、1-20%的结冷胶、1-30%的瓜尔胶、1-50%的果胶、5-80%的羧甲基纤维素钠、1-50%的三聚磷酸钠、1-50%的六偏磷酸钠、5-40%的异Vc钠,所述的复合发酵剂由保加利亚乳杆菌、嗜热链球菌、植物乳杆菌原料配制而成,其中采用的重量比为10-80%的保加利亚乳杆菌、10-80%的嗜热链球菌、10-50%的植物乳杆菌,所述的玫瑰花汁为玫瑰花鲜榨原汁或玫瑰花浓缩汁,所述的玫瑰复合果蔬汁发酵饮料按以下步骤制备:
A、配料:按配方称取各原料,以1000份最终产品计,其包含以下质量份的各原料:玫瑰花汁20-200份,果汁1-50份,蔬菜汁1-30份,复配增稠稳定剂1-3份,甜味剂0.1-130份,食用香精0.03-2份,复合发酵剂为0.01-0.5份,其余为水,备用;
B、将玫瑰花汁、果汁、蔬菜汁按10%-90%浓度用水稀释混匀,得初加工果蔬汁,备用;
C、将复配增稠稳定剂和甜味剂混匀,用80-85℃热水剪切15-20min,充分溶解,降温至30℃以下,备用;
D、将步骤B和步骤C所得两部分料液混匀,定容,经过18-20MPa均质一遍,再经过95℃、5min的高温杀菌,待降温至37-42℃后,接种复合发酵剂,经过35-42℃发酵16-18h后,得中加工果蔬汁,备用;
E、将经过步骤D发酵以后的中加工果蔬汁进行最终调配,添加食用香精后进行115-121℃的UHT超高温瞬时灭菌,在3-15s的杀菌后降温至35-50℃再进行无菌灌装、密封,即得所述玫瑰复合果蔬汁发酵饮料。
2.根据权利要求1所述的一种玫瑰复合果蔬汁发酵饮料,其特征在于:所述的玫瑰复合果蔬汁发酵饮料,以1000份最终产品计,其包含以下质量份的各原料:玫瑰花汁40-100份,浓缩果汁1-20份,浓缩蔬菜汁1-20份,复配增稠稳定剂1-2.5份,甜味剂0.1-130份,食用香精0.03-2份,复合发酵剂为0.01-0.5份,其余为水。
3.根据权利要求1所述的一种玫瑰复合果蔬汁发酵饮料,其特征在于:所述的果汁与蔬菜汁为浓缩果汁、浓缩蔬菜汁或由水果、蔬菜原料鲜榨而成。
4.根据权利要求3所述的一种玫瑰复合果蔬汁发酵饮料,其特征在于:所述的果汁为苹果汁、葡萄汁、石榴汁、桃汁、西瓜汁、草莓汁、柠檬汁、橙汁、芒果汁、木瓜汁、香蕉汁、梨汁、荔枝汁中的一种或两种以上;所述的蔬菜汁为番茄汁、胡萝卜汁、芹菜汁、菠菜汁、西兰花汁、白菜汁、青椒汁、冬瓜汁、西葫芦汁中的一种或两种以上。
5.根据权利要求1或2所述的一种玫瑰复合果蔬汁发酵饮料,其特征在于:所述的甜味剂为白砂糖、蔗糖、麦芽糖、葡萄糖、果糖、乳糖或木糖醇中的一种或两种以上。
6.根据权利要求1或2所述的一种玫瑰复合果蔬汁发酵饮料,其特征在于:所述的食用香精为玫瑰香精、玫瑰茄香精、绿茶香精、红茶香精、苹果香精、葡萄香精、石榴香精、桃香精、西瓜香精、草莓香精、柠檬香精、橙香精、芒果香精、木瓜香精、香蕉香精、梨香精、荔枝香精中的一种或两种以上。
