Abstract
一种牛骨风味小麦胚芽粉及其制备方法,其特征在于由下列重量份的原料制成:小麦胚芽400-450、桃叶1-1.2、旋花1.4-1.5、榕须2-2.3、土瓜根1.8-2、琐阳0.8-1、峨屏草1.3-1.6、佛肚花1.4-1.7、红豆沙10-11、胡萝卜20-25、山药30-33、藕粉20-22、牛骨汤10-11、葡萄籽油3-4、营养添加剂4-5。本发明各原料的配比合理,咸甜适中,细腻爽滑,其中添加的牛骨汤不仅含有丰富的钙质,还使得本发明鲜味十足,藕粉则可改善本发明的口感,而葡萄籽油则使得本发明具有抗氧化的作用,此外,本发明还具有清热解毒、益气养颜、补肾润肠、祛风活血的功效。

本发明属于食品加工技术领域,涉及一种小麦胚芽,尤其涉及一种牛骨风味小麦胚芽粉及其制备方法。
背景技术
小麦胚芽是小麦中营养价值最高的部分,含丰富的维他命E、B1及蛋白质。现在市场上销售的有关小麦胚芽的产品口味品种少,且多不具有保健功能,已不能满足消费者日益增长的需求。
发明内容
本发明的目的是提供一种牛骨风味小麦胚芽粉及其制备方法,本发明具有风味独特、营养丰富的特点。
本发明所采用的技术方案是:
一种牛骨风味小麦胚芽粉,其特征在于由以下重量份的原料制成:
小麦胚芽400-450、桃叶1-1.2、旋花1.4-1.5、榕须2-2.3、土瓜根1.8-2、琐阳0.8-1、峨屏草1.3-1.6、佛肚花1.4-1.7、红豆沙10-11、胡萝卜20-25、山药30-33、藕粉20-22、牛骨汤10-11、葡萄籽油3-4、营养添加剂4-5;
所述营养添加剂由下列重量份原料制成:当归油0.1-0.2、千金花1-1.2、辣椒叶1.3-1.4、李树叶1.1-1.2、甜叶菊0.9-1、扇贝肉40-45、果酱7-8;
制备方法为:(1)将千金花、辣椒叶、李树叶、甜叶菊加4-5倍的水文火煎煮30-35分钟,过滤除渣,收集滤液;
(2)将扇贝肉与滤液混合入锅,小火炒至锅底干燥时加入剩余物料,在60-65℃下焖制30-40分钟后出锅,送入烘箱,烘干后粉碎,即得。
所述的牛骨风味小麦胚芽粉的制备方法,其特征在于包括以下步骤:
(1)将桃叶、旋花、榕须、土瓜根、琐阳、峨屏草、佛肚花加5-6倍的水文火煎煮40-50分钟,过滤除渣,所得提取液与牛骨汤合并;
(2)将胡萝卜、山药去皮切块,送入开水锅中大火煮20-30分钟后捞出沥干,加葡萄籽油打成泥,加入红豆沙拌匀,经冷冻干燥后研成粉末;
(3)将小麦胚芽与步骤(1)所得物料混合拌匀,送入蒸箱,在100℃下蒸制10-15分钟,然后送入烘箱,待含水量降至6-7%时出料,进行粉碎;
(4)将步骤(2)、(3)所得物料与剩余物料混合入锅,小火炒香,即得。
本发明的有益效果为:
本发明各原料的配比合理,咸甜适中,细腻爽滑,其中添加的牛骨汤不仅含有丰富的钙质,还使得本发明鲜味十足,藕粉则可改善本发明的口感,而葡萄籽油则使得本发明具有抗氧化的作用,此外,本发明还具有清热解毒、益气养颜、补肾润肠、祛风活血的功效。
具体实施方式
一种牛骨风味小麦胚芽粉,其特征在于由以下重量份(公斤)的原料制成:
小麦胚芽450、桃叶1.2、旋花1.5、榕须2.3、土瓜根1.8、琐阳1、峨屏草1.6、佛肚花1.7、红豆沙11、胡萝卜25、山药33、藕粉20、牛骨汤11、葡萄籽油3、营养添加剂5;
所述营养添加剂由下列重量份(公斤)原料制成:当归油0.1、千金花1.2、辣椒叶1.4、李树叶1.2、甜叶菊1、扇贝肉45、果酱8;
制备方法为:(1)将千金花、辣椒叶、李树叶、甜叶菊加4-5倍的水文火煎煮30-35分钟,过滤除渣,收集滤液;
(2)将扇贝肉与滤液混合入锅,小火炒至锅底干燥时加入剩余物料,在60-65℃下焖制30-40分钟后出锅,送入烘箱,烘干后粉碎,即得。

小麦胚芽400-450、桃叶1-1.2、旋花1.4-1.5、榕须2-2.3、土瓜根1.8-2、琐阳0.8-1、峨屏草1.3-1.6、佛肚花1.4-1.7、红豆沙10-11、胡萝卜20-25、山药30-33、藕粉20-22、牛骨汤10-11、葡萄籽油3-4、营养添加剂4-5;
