Abstract

 炭素数16~22の直鎖飽和脂肪酸及びその低級アルコールエステルから選ばれる1種以上と2位にオレオイル基及び/又はリノロイル基を有するトリグリセリドに、Rhizopus oryzae由来及び/又はRhizopus delemar由来のリパーゼと大豆粉末とを含有する造粒粉末リパーゼを作用させてエステル交換反応を行い、反応後、粉末リパーゼを除去することを含むハードバターの製造方法。この方法は、カカオ脂の代用脂として優れた特性を有するハードバターの工業的に適した製造方法である。
