Description
本発明の上記並びに他の利点及び特徴を以下の詳細な説明で記載し、以下の図面で示す。
500mlのフラスコに100gのパームオレイン及び10gのリポザイムTL IMを入れた。その後、8gのグリセロールを0.08mlの水と混合し、結果物のグリセロール・水混合物を1.6gグリセロール/時の速度で添加した。反応混合物を70℃で8時間反応させた。反応過程で、試料を反応混合物から1時間間隔で採取した。次いで試料の遊離脂肪酸、モノアシルグリセロール(MAG)、ジアシルグリセロール(DAG)及びトリアシルグリセロール(TAG)を高性能液体クロマトグラフィーで分析した。結果を表2に示す。

Claims (13)
- ジアシルグリセロール富化な油脂又は油の製造プロセスであって、以下の:
反応チャンバーに油脂又は油及び固定化リパーゼ調製物を入れて、反応混合物を得る工程;
グリセロールを前記反応混合物に、1時間当たり前記固定化リパーゼ調製物100重量部につきグリセロールを40重量部以下の割合で連続的に添加して、グリセロールが固定化リパーゼ調製物を不活性化せずにクリセロール分解反応をおこす工程;
反応混合物中の水分を脱水法により除去する工程;及び
未反応材料及び副生成物を反応混合物から分離して、ジアシルグリセロール富化な油脂又は油を得る工程;
を含む、プロセス。 - 追加の水を前記反応混合物に添加する工程をさらに含む、請求項1に記載のプロセス。
- 前記追加の水を予めグリセロールと混合してグリセロール・水混合物を得た後、前記グリセロール・水混合物を前記反応混合物に、1時間当たり前記固定化リパーゼ調製物100重量部につき前記グリセロール・水混合物を40重量部以下の割合で連続的に添加する工程をさらに含む、請求項2に記載のプロセス。
- 前記追加の水を前記固定化リパーゼ調製物の少なくとも0.2〜100重量部の量で添加する、請求項3に記載のプロセス。
- 前記反応混合物に添加される前記グリセロールが、油脂又は油の15重量%未満の量である、請求項1に記載のプロセス。
- 前記副生成物が遊離脂肪酸及びモノアシルグリセロールを含む、請求項1に記載のプロセス。
- 前記グリセロールを添加した後の前記反応混合物中の前記遊離脂肪酸及び前記モノアシルグリセロールの総濃度が、油脂又は油の15重量%以下である、請求項6に記載のプロセス。
- 前記グリセロールを添加した後の前記反応混合物中の前記遊離脂肪酸の濃度が油及び油脂の10重量%以下である、請求項6に記載のプロセス。
- 前記リパーゼを親水性担体上に固定して、前記固定化リパーゼ調製物を調製する、請求項1に記載のプロセス。
- 前記親水性担体がシリカ系材料である、請求項9に記載のプロセス。
- 前記脱水法が、減圧下で脱水することを含む、請求項1に記載のプロセス。
- 前記固定化リパーゼ調製物が、リゾープス属(Rhizopus)、アスペルギルス属(Aspergillus)及びムコール属(Mucor)の微生物由来のリパーゼ、脾臓リパーゼ、リゾープス・デレマー(Rhizopus delemar)、リゾープス・ジャポニカス(Rhizopus japonicus)、リゾープス・ニベウス(Rhizopus niveus)、アスペルギルス・ニガー(Aspergillus niger)、ムコール・ジャバニカス(Mucor javanicus)及びムコール・ミエヘイ(Mucor miehei)由来のリパーゼからなる群から選択される固定化1,3−位選択的リパーゼを含む、請求項1に記載のプロセス。
- 油脂又は油が、植物油、植物性脂肪、動物油、動物性油脂、加工油、加工油脂、及びそれらの混合物からなる群から選択される、請求項1に記載のプロセス。
