Abstract

Proceso para la producción de una infusión de malta fermentable, que incluye las siguientes etapas: a- licuefacción de cereales, con la ayuda de actividad amilasa y/o endoproteasa, para obtener una papilla malta de licuada, y b- sacarificación de dicha papilla de malta licuada en presencia de alfa-amilasa; c- filtración de la papilla licuada y sacarificada para obtener una infusión de malta fermentable; al menos una de las etapas a- y b- antes mencionadas se lleva a cabo en presencia de una enzima que tenga actividad de exo-peptidasa (en particular una exo-peptidasa fúngica, o provenga de un hongo seleccionado de Aspergillus Nier, Aspergillus oryzae o Aspergillus sojae). Se incluye un proceso para fabricar cerveza, incluyendo las etapas de preparación de una infusión de malta utilizando el proceso según lo descrito y la fermentación de dicha infusión de malta para obtener cerveza; así como un proceso para producir alcohol o una bebida que lo contenga.
