Abstract
Изобретение относится к способу получения сбраживаемого сусла из зерновых, который включает в себя стадии: (а) разжижения злакового материала с помощью альфа-амилазной и/или эндопротеазной активности с получением ожиженного затора; (б) осахаривания указанного ожиженного затора в присутствии альфа-амилазы; (в) фильтрование ожиженного и осахаренного затора с получением сбраживаемого сусла, отличающемуся тем, что, по меньшей мере, одну из стадий (а) и (б) осуществляют в присутствии фермента, проявляющего экзопептидазную активность. В качестве ферментов, проявляющих экзопептидазную активность, используются экзопептидазы, предпочтительно термостабильные экзопептидазы, такие как аминопептидазы грибков, но могут также использоваться и термостабильные карбоксипептидазы. Особенно предпочтительными по способу настоящего изобретения являются эндогенные аминопептидазы грибков Aspergillus, наиболее предпочтительными из которых являются A.niger, A.oryzae и A.sojae.Международная заявка была опубликована вместе с отчетом о международном поиске.
