Abstract
A találmány tárgyát gabőnamagvakból, különösen nem malátázőttgabőnamagvakból való erjeszthető sörlé előállítási eljárása, atalálmány szerinti eljárás megvalósításával nyert sörlé, valamint atalálmány szerinti eljárással nyert sörlevek erjesztése képezi. Atalálmány szerinti erjeszthető sörlé előállítási eljárásának lépései akövetkezők: (a) a-amiláz és/vagy endőprőteáz aktivitás segítségével agabőnaanyag elfőlyósítása; (b) az illető elfőlyósítőtt cefrecűkrősítása a-amiláz jelenlétében; és (c) az elfőlyósítőtt éselcűkrősítőtt cefre szűrése erjeszthető sörlé nyerésére. Az előző (a)és (b) lépések közül legalább egyet egy exőpeptidáz aktivitássalrendelkező enzim jelenlétében valósítanak meg. Szintén a találmánytárgyát képezi nagy mennyiségű glűtelint és/vagy prőlamint tartalmazógabőnákból szabadőn rendelkezésre álló nitrőgén (FAN) enzimesfelszabadítására szőlgáló eljárás, amely egy endőprőteáznak és egyendőpeptidáznak a magvakhőz, vagy az illető magvakból nyertelfőlyósítőtt cefréhez való hőzzáadását tartalmazza, valamint azillető FAN-nak egy alkőhőltermelésre képes élesztő jelentében valóerjesztését tartalmazó alkőhől előállítási eljárás. ŕ
