Abstract
L'invention concerne la fabrication de moût de brasserie par traitement enzymatique de matières amylacées comprenant une quantité prédominante d'orge. Les enzymes utilisés sont une amylase produite par culture aérobie d'un micro-organisme du genre Streptomyces et une protéase produite par un micro-organisme du genre Aspergil lus. Application à la fabrication de bière.
