Abstract
1. Вспомогательное приспособление для приготовления пищи тепловой обработкой, включающее:(а) лист гибкого устойчивого к пригоранию материала;(б) композицию, нанесенную на одну из лицевых сторон листа, содержащую смесь:1) растительного или животного масла с температурой плавления ниже 20°C;2) растительного или животного жира с температурой плавления выше 20°C и3) одного или более из пряных трав, специй и усилителей вкуса.2. Вспомогательное приспособление по п. 1, в котором лист является бумагой для выпекания.3. Вспомогательное приспособление по п. 1, в котором масло выбрано из группы, состоящей из подсолнечного масла, рапсового масла, хлопкового масла, арахисового масла, соевого масла, оливкового масла, пальмового масла, кокосового масла и пальмоядрового масла.4. Вспомогательное приспособление по п. 1, в котором жир выбран из группы, состоящей из свиного жира, говяжьего топленого жира, лярда, костных жиров, масла животного, фракционированного пальмового жира и полностью или частично гидрогенизированного или переэтерифицированного пальмового масла, хлопкового масла, арахисового масла, соевого масла, оливкового масла, подсолнечного масла или рапсового масла.5. Вспомогательное приспособление по любому из пп. 1, 3 или 4, в котором композиция содержит масло в количестве от 1% до 34 мас.% и жир в количестве от 66% до 99 мас.%.6. Вспомогательное приспособление по любому из пп. 1-4, в котором композиция содержит также от 0,01% до 1 мас.% моноглицерида, стерина или лецитина.7. Claims (15)
1. Вспомогательное приспособление для приготовления пищи тепловой обработкой, включающее:
(а) лист гибкого устойчивого к пригоранию материала;
(б) композицию, нанесенную на одну из лицевых сторон листа, содержащую смесь:
1) растительного или животного масла с температурой плавления ниже 20°C;
2) растительного или животного жира с температурой плавления выше 20°C и
3) одного или более из пряных трав, специй и усилителей вкуса.
2. Вспомогательное приспособление по п. 1, в котором лист является бумагой для выпекания.
3. Вспомогательное приспособление по п. 1, в котором масло выбрано из группы, состоящей из подсолнечного масла, рапсового масла, хлопкового масла, арахисового масла, соевого масла, оливкового масла, пальмового масла, кокосового масла и пальмоядрового масла.
4. Вспомогательное приспособление по п. 1, в котором жир выбран из группы, состоящей из свиного жира, говяжьего топленого жира, лярда, костных жиров, масла животного, фракционированного пальмового жира и полностью или частично гидрогенизированного или переэтерифицированного пальмового масла, хлопкового масла, арахисового масла, соевого масла, оливкового масла, подсолнечного масла или рапсового масла.
5. Вспомогательное приспособление по любому из пп. 1, 3 или 4, в котором композиция содержит масло в количестве от 1% до 34 мас.% и жир в количестве от 66% до 99 мас.%.
6. Вспомогательное приспособление по любому из пп. 1-4, в котором композиция содержит также от 0,01% до 1 мас.% моноглицерида, стерина или лецитина.
7. Вспомогательное приспособление по любому из пп. 1, 3 или 4, в котором общее количество масла и жира составляет от 5% до 20 мас.% композиции.
8. Вспомогательное приспособление по п. 1, в котором количество одного или более из пряных трав, специй и усилителей вкуса составляет от 0,5% до 75 мас.% композиции.
9. Вспомогательное приспособление по любому из пп. 1 или 8, в котором одно или более из пряных трав и специй выбирается из группы, включающей петрушку, розмарин, перец и шнитт-лук.
10. Вспомогательное приспособление по пп. 1, в котором усилители вкуса составляют от 10% до 80 мас.% композиции.
11. Вспомогательное приспособление по любому из пп. 1, 8 или 10, в котором один или более усилителей вкуса выбраны из группы, включающей неорганические соли, соли аминокислот, белковые гидролизаты, вкусоароматические препараты и дрожжевые экстракты.
12. Способ подготовки вспомогательного приспособления по любому из пп. 1-11, предусматривающий:
(а) растягивание листа гибкого устойчивого к пригоранию материала на плоской поверхности;
(б) смазывание листа смесью жира и масла и
(в) распределение одного или более из пряных трав, специй и усилителей вкуса по всей смеси жира и масла.
13. Способ по п. 12, дополнительно включающий стадию покрывания одного или более из пряных трав, специй и усилителей вкуса маслом.
14. Применение вспомогательного приспособления по любому из пп. 1-11 для приготовления мяса тепловой обработкой, в котором куски мяса помещаются на вспомогательное приспособление в прямом контакте с композицией и подвергаются тепловой обработке.
15. Применение вспомогательного приспособления по любому из пп. 1-11 для приготовления овощей тепловой обработкой, в котором куски овощей помещаются на вспомогательное приспособление в прямом контакте с композицией и подвергаются тепловой обработке.
