Abstract

技术领域
本发明涉及一种烹饪辅助材料,以及该烹饪辅助材料用于烹饪食品的用途。该烹饪辅助材料是一种组件,其包括:柔性的抗燃烧材料的片材,例如烘焙纸,或者类似的材料;以及脂肪和油的混合物与香草、调味剂和香味增强剂一起的组合物。
背景技术
肉和许多其他食品在传统的烹饪方法中被放置在烤箱或者平底锅中烹饪,并且通常加入各种调味品以及香味增强剂以获得具有好味道和吸引人的香气的食品。众所周知,烹饪肉食会导致大量的油烟弄脏烤箱或者平底锅以及周围的表面。烹饪后需要被清理干净的混乱的程度显著地取决于被烹饪的食品的性质、烹饪的温度以及其它因素。烤箱的壁或者处于烹饪平底锅周围的表面被脂肪和油以及烹饪时的汁液等泼溅和玷污是非常常见的。在烹饪肉类的情况下,通常在烹饪之后需要清洁大量的表面。
目前,家用食品制备越来越要求方便快捷,以及烹饪之后的清洁工作最小化。
能够使用香草、调味剂以及其他香味增强剂来烹饪调制食品也是很重要的。这些成分可以在烹饪前或者烹饪中加入。它们可以逐个加入或者作为混合物加入,但是必须注意每种成分需要添加正确的量以获得所期望的烹饪食品的味道。有时候当给烹饪中或者待烹饪的肉食添加调味剂时(例如通过洒在肉上),很容易加入太多或者太少,或者有些地方加入太多而另外的地方没有加入。
简单的烹饪技术已经许多年努力尝试去满足这些需求,也取得了一些成功。但是典型的家庭烹饪仍然在寻找一种简单便捷的方法去烹饪肉食和蔬菜,保持干净且同时美味以及美观。
美国专利申请10/890,947(公开号为US2005-0013951)公开了一种用于将食物置于包裹内烹饪的包装材料,其由铝箔片加工成型以提供均匀的热量分布;以及直接接触食物的纸,以提供不发粘的表面。
DE2900195公开了一种用于油炸平底锅的插入物,在油炸肉食的时候不需要油或脂肪。该插入物由一张直径略大于平底锅底部的圆盘构成,由具有硅树脂聚合体涂层的纸制成。
公开号为JP2000-037171的日本专利申请涉及一种包含调味剂的片材,其能够均匀适度地向食物制剂赋予调料,例如盐或调味品。根据此专利申请,水状胶质、例如玉米淀粉、马铃薯淀粉、稻米淀粉或木薯粉用于将香草、调味剂和调味料粘附到片材上。这一方式的缺点在于水状胶质的导热性不好。它们往往是变得过热而不熔化。因此存在燃烧制品以及片材的高风险,制品尤其是任何用作配菜(garnishes)的香草和调味剂。水状胶质仅仅起到粘合的作用。
申请人现在发现了一种简单有效的方式来调制准备好烹饪的食物,以及烹饪该食物时烹饪汁液能最少量地喷洒泼溅到墙壁或者其它表面上,不会烧掉配菜或者其它烹饪材料,同时避免厨师在烹饪食物时加入油或者脂肪。
本发明的目的是提供一种烹饪辅助材料,能够克服、至少部分地克服一个或者多个上述已知烹饪方法中的问题。
发明内容
在本发明的第一方面,提供一种烹饪辅助材料,其包括:
a)柔性抗燃烧材料的片材;
b)布置在片材的一个表面上的组合物,该组合物含有下列成分的混合物:
i.熔点低于20℃的植物油或者动物油;
ii.熔点高于20℃的植物脂肪或者动物脂肪;以及
iii.一种或多种香草、调味剂以及香味增强剂。
片材可以由任何适合此目的的材料制成,但是优选为烘焙纸。
更优选,油可以选自:向日葵油,菜籽油,棉花籽油,花生油,大豆油,橄榄油,棕榈油,椰子油,棕榈仁油。脂肪更优选选自:猪肉脂肪,牛脂,猪油,骨脂,黄油,分馏棕榈脂肪,以及任何全部或部分氢化的或内酯化的棕榈油,棉花籽油,花生油,大豆油,橄榄油,向日葵油,或菜籽油。
在本发明的优选实施方案中,组合物含有1-34重量%的油以及66-99重量%的脂肪。优选地,油和脂肪一起占组合物的5-20重量%。组合物也可以包含0.01-1重量%的单酸甘油酯、固醇或者卵磷脂。所述一种或多种香草和调味剂优选选自:欧芹,迷迭香,胡椒粉,以及细香葱。所述一种或多种香草和调味剂以及香味增强剂更优选占组合物的0.5-75重量%。所述香味增强剂可以占组合物的10-80重量%。优选的香味增强剂可以是无机盐,氨基酸盐,蛋白质水解物,调味制剂,以及酵母提取物。
在本发明的第二方面,提供一种制备本发明第一方面的烹饪辅助材料的方法,包括:
a)在一个平面上伸展开柔性抗燃烧材料的片材;
b)在片材上洒布脂肪和油的混合物;以及
c)在脂肪和油的混合物上分布一种或多种香草、调味剂以及香味增强剂。
此方法也可以包括用油涂覆一种或多种香草、调味剂以及香味增强剂的步骤,例如向日葵油,更优选通过喷洒油来进行。
在另一个方面,提供本发明第一方面中的烹饪辅助材料用于烹饪食物的用途,其中将食物块放置在烹饪辅助材料上以与组合物直接接触,并且进行烹饪。优选地,该食物为肉,例如牛肉、羊肉、鸡肉或者鱼肉。或者,食物可以是蔬菜或蔬菜块,例如南瓜、茄子、番茄,或者任何其他适宜于这种烹饪方式的肉质蔬菜。
详细描述
本发明提供一种简单有效的烹饪食物的方式,并且烹饪该食物时烹饪汁液能最少量地喷洒泼溅到墙壁或者其它表面上,具有带有配菜(garnishes)和香味增强剂的涂层,且不会烧掉配菜或者任何其它烹饪材料。
使用者可以在用平底锅油炸或者用烤箱烤制时使用其表面涂有脂肪、油、香草、混合调味料以及香味增强剂的混合物的常规烘焙纸。一个重要的优点在于无需向平底锅或烤盘中加入额外的脂肪或油。也就是说,用于涂覆具有香草、混合调味料和香味增强剂的烘焙纸的脂肪和油具有双重的目的,也就是将香草、混合调味料和香味增强剂粘附到烘焙纸上、以及提供烹饪中所需的脂肪或油。
本发明还具有几项额外的益处:
●香草以及其他配菜在烹饪中不会燃烧,
●食品(尤其是牛肉、羊肉、鸡肉或鱼肉)将保持它们自然汁液,这是因为通过覆盖片材显著减少了湿气的流失,
●避免平底锅或烤盘中产生过多的脂肪,从而显著地减少或完全避免了烹饪汁液喷洒到壁上和烹饪表面上,以及烹饪后的清洁被最小化。
柔性抗燃烧材料的片材可以是任何薄膜、箔或层压材料,或任何这种材料的组合,包括例如纸、聚四氟乙烯或基座原料,以及甚至自然的树叶例如香蕉叶和海藻叶。优选的片材材料是烘焙纸,即商业上用作烘焙的典型的纸。这种纸通常是覆盖有硅涂层的纤维素纸。尽管这种纸更多地被用于烤箱烹饪中,在本发明中它能同时适宜于在平底锅或烤箱中烹饪时使用。
用于涂覆在片材上的组合物中的脂肪和油的混合物具有两个重要的功能。第一是为了保持片材的柔性并且确保香草和混合调味料在操作、运送、制备以及烹饪过程中粘附在片材上。第二是为了提供烹饪中所需的脂肪和油,从而厨师无需加入额外的脂肪或油。
在本发明的上下文中,油在20℃、1个大气压下为液体,而脂肪在此温度和大气压下为固体。
植物油和动物油的例子是:向日葵油,菜籽油,棉花籽油,花生油,大豆油,橄榄油,精制的可食用部分的棕榈油,椰子油,以及棕榈仁油,这些可以单独使用或者结合使用。优选的是向日葵油或精制棕榈油,由于它们中性的香味以及良好的商业实用性。
动物脂肪或蔬菜脂肪的例子是:黄油,猪肉脂肪,牛脂,猪油以及骨脂,分馏过的棕榈脂肪,以及任何全部氢化、内酯化、氢化、非氢化的分馏油,例如棕榈油、棉花籽油、花生油、大豆油、橄榄油、向日葵油或菜籽油。最优选地,脂肪是分馏脂肪,或氢化以及内酯化的棕榈油,它们具有中性的香气、低反式脂肪酸分布以及良好的商业实用性。
油的量优选占组合物的1-34重量%,脂肪的量占组合物的66-99重量%。更优选地,油的量约为20%,脂肪的量约为80%。最佳的油/脂肪混合组合物可以由加工温度的作用以及经济上可行的生产工艺所需的生产线的产量决定。
0.01%至1%的单酸甘油酯、固醇或卵磷脂可以作为稳定剂和乳化剂,以控制并促进产品在生产之后用于不同的气候条件时抵抗温度波动的稳定性。
脂肪和油的量可以占组合物总重量的5-20%,更优选为约15%。
组合物中的香草和调味剂的量可以是组合物总重量的0.5-75%。优选的量是10-20%,这取决于配方。使用的香草通常是:欧芹,迷迭香,牛至,媒墨角兰,龙嵩,胡椒粉,细香葱,以及其他类似的普通的厨用香草。更普通的调味剂包括辣椒粉、红辣椒、番茄和其他自然的富含香味的厨用的水果。
香味增强剂的量可以占组合物总重量的10-80%,优选60-70%。使用的香味增强剂通常是盐,例如氯化钠或氯化钾,氨基酸盐及其衍生物例如谷氨酸钠,水解蛋白,核苷酸,自然的和非自然的调味品和调味品制剂,酵母提取物以及其他称为味觉增强的制剂。
片材可以具有任何适宜于烹饪操作的尺寸,且可以适应于当地的肉的常规单独尺寸,在大多数国家为100g到300g。
本发明还涉及一种工业或家庭制备烹饪辅助材料的方法,该方法可以在工业设置中是连续工艺,其中:
●在一个平面上展开片材,
●将脂肪和油的混合物洒布在片材上,
●将香草,调味剂以及香味增强剂分布在已涂覆的片材上,
●可以用油涂覆香草和调味剂,任选地包含被分布或者溶解在油中的调味物质。
在典型的过程中,片材展开在一个平面上,在温度高于脂肪/油混合物的熔点的条件下,将油和脂肪的混合物涂敷在片材上。刚好在液态脂肪/油混合物被冷却至低于其熔点之前,将香味增强剂、香草和混合调味料均匀地施用在片材的表面上。香草和混合调味料可以用油涂覆以增强其对片材的粘附。可以将温和的压力施加到片材上,从而达到粘性的脂肪/油混合物和任何干的预混合成分之间的紧密接触。可以将片材切割成较小的片以适应常规使用者所需的肉块的尺寸。
本发明也涉及烹饪辅助材料用于在平底锅或烤箱中烹饪食品的用途。食品优选为肉,可以是牛肉、羊肉、鸡肉或鱼肉,或任何其它适合用这种方式烹饪的肉。将肉块放置在烹饪辅助材料上以与组合物直接接触,然后在平底锅或烤箱中或任何其它适宜的烹饪设备中进行烹饪。使用者将肉块放置在片材的带涂层的表面上。片材可以折叠以覆盖大部分或全部肉块。将被覆盖的肉块放置到烹饪设备上或烹饪设备中,例如预热的具有中等热度的平底锅或者预热的常规烤箱(70-220℃)。烹饪过程通常每边进行5-7分钟,这取决于肉的种类以及切割的情况。去除片材,食物即可食用。
在本发明中,使用所述烹饪辅助材料同样可以烹饪蔬菜。例子包括夏季产南瓜和茄子。任何具有基质水活性低于0.7的蛋白质/淀粉类食物都是适宜的,例如豆腐和干酪。一种可能的产品是包含4个单元片材的包装。每个片材的尺寸取决于肉块的尺寸,并且通常在15-20cm的范围内。每张片材典型地具有总重为5-8g的脂肪/油、香草、调味剂以及香料。
实施例
本发明将通过下列实施例来更进一步地说明。应该认识到实施例在任何方面不限制本发明。
实施例1-常规方法
厨师取一块食物并将其放置在烹饪辅助材料上。食物块两面均被片材覆盖或者被松散的包裹在片材中。将含有食物块的烹饪辅助材料放置在预热好的平底锅上,并在适度的温度下烹饪一段必需的时间,并且适宜的话每面都烹饪。低温烹饪避免蛋白质的快速降解,并改善风味、味觉和口感。去除片材,食物块即可食用。组合物的成分赋予煮熟的食物以味道,而片材保护食物以免其变干,从而确保自然汁液。由于自然保存的汁液,香味能更好地被感知且美味增强。
烹饪肉类的基础方法包括下列步骤:
1.将一个干净的平底锅放置到加热台(例如电或气感应炉)上,在例如50%的最大加热能力下。无需加入油或脂肪。
2.打开烹饪辅助材料的片材。
3.将肉放置到打开的片材上并折叠片材或者将片材包裹在肉周围。
4.将包裹好的片材放置到预热好的平底锅上。
5.每面烹饪几分钟。
6.从平底锅中取出。
7.食用之前丢弃片材。
实施例2-配方
下面的配方可以用于烹饪牛肉或鸡肉,或任何其他适宜的肉类或食物,这取决于使用者的偏好。
应该认识到,尽管本发明公开了特定的实施方案,但是,也可以在不超出本发明权利要求所限定的范围的情况下进行变化和修改。此外,当存在对于具体特征的等同时,各种等同特征也落入本发明的保护范围内。
Claims (15)
1.一种烹饪辅助材料,其包括:
a)柔性抗燃烧材料的片材;
b)布置在片材的一个表面上的组合物,该组合物含有以下组分的混合物:
i.熔点低于20℃的植物油或动物油;
ii.熔点高于20℃的植物脂肪或动物脂肪;以及
iii.一种或多种香草、调味剂以及香味增强剂。
2.如权利要求1所述的烹饪辅助材料,其中片材是烘焙纸。
3.如权利要求1或2所述的烹饪辅助材料,其中油选自:向日葵油,菜籽油,棉花籽油,花生油,大豆油,橄榄油,棕榈油,椰子油以及棕榈仁油。
4.如权利要求1-3中任一项所述的烹饪辅助材料,其中脂肪选自:猪肉脂肪,牛脂,猪油,骨脂,黄油,分馏棕榈脂肪,以及任何全部或部分氢化的或内酯化的棕榈油、棉花籽油、花生油、大豆油、橄榄油、向日葵油或菜籽油。
5.如权利要求1-4中任一项所述的烹饪辅助材料,其中组合物含有1-34重量%的油和66-99重量%的脂肪。
6.如权利要求1-5中任一项所述的烹饪辅助材料,其中组合物进一步包含0.01-1重量%的单酸甘油酯、固醇或卵磷脂。

c)将一种或多种香草、调味剂和香味增强剂分布到脂肪和油的混合物上。
13.如权利要求12所述的方法,进一步包括用油涂覆一种或多种香草、调味剂和香味增强剂的步骤。
14.如权利要求1-11中任一项所述的烹饪辅助材料用于烹饪肉的用途,其中将肉块放置到烹饪辅助材料上以与所述组合物直接接触,并进行烹饪。
15.如权利要求1-11中任一项所述的烹饪辅助材料用于烹饪蔬菜的用途,其中将蔬菜块放置到烹饪辅助材料上以与所述组合物直接接触,并进行烹饪。
