Description
DK 177892 B1 i
An oven grid system comprising an oven grid and an oven grid cover,
AN OVEN GRID FOR SUCH A SYSTEM, A GRID COVER FOR SUCH A SYSTEM AND
THE USE OF SUCH A SYSTEM
5 The present invention relates to an oven grid system for keeping an oven grid clean during use and for collecting drippings and meat juices during the use of the oven grid system and to the elements of such a system as well as the use of such a system.
Background of the invention 10
After using a cooking grid for roasting or grilling of meat, an often cumbersome work follows of cleaning the grid for drippings, meat juices and/or other remnants of food. Apart from an excessive consumption of water, soap and other remedies, such a cleaning typically requires a relative large amount of space and involves a 15 significant risk of having the environments smeared with grease or other sticky substances.
It is, of course, possible to place a sheet of baking paper or another type of greaseproof paper on the grid to avoid direct contact between the meat and the grid.
20 This solution, however, means that the meat will lay in the drippings and meat juices during the cooking, which makes it difficult to obtain the desired crisp and delicious result of the cooking.
WO 2008/149578 describes a rectangular cover for an oven grid, which cover 25 contains a series of parallel crests and grooves, wherein the grooves are closed at both ends for being able to collect and hold drippings and meat juices from the food being prepared using the cover.
US 8,234,973 describes a liner used to line the grills of barbecues and other types of 30 cooking grill structures. The liner is shaped in a sinusoidal pattern with certain parts DK 177892 B1 2 of the grooves thereof perforated at their lowermost edge, so that drippings can leave the liner through these perforations.
Brief description of the invention 5
It is an object of the present invention to provide a solution, which overcomes the above-mentioned difficulties and disadvantages of roasting or grilling on a cooking grid.
10 The present invention relates to an oven grid system comprising an oven grid and a grid cover for keeping the oven grid clean during use, wherein the oven grid and the grid cover together are arranged to be able to collect and hold drippings and meat juices from meat being roasted or grilled using the oven grid system, wherein the grid cover comprises a sheet of a heat-resistant and greaseproof material, said sheet 15 comprising, in one direction, a plurality of pleats with a consecutive row of alternating top folds and bottom folds forming parallel crests and grooves, respectively, in the material, which grooves are open at both ends, the pleating of the sheet being performed with the distance between any two neighbouring top folds corresponding to the distance between two neighbouring grid wires of the oven grid, 20 so that the grid cover can be arranged with its top folds placed on the grid wires of the oven grid, collecting, in the grooves of the grid cover between the grid wires, drippings and meat juices from meat being roasted or grilled using the oven grid system, wherein the sheet is rectangular, and each of the substantially plane grid cover panels, which are formed by the part of the sheet extending between a top fold 25 and a neighbouring bottom fold, has bevelled edges so that the length of the bottom folds of the grid cover are shorter than the length of the top folds, and wherein the oven grid comprises a plurality of grid bases, which grid bases are arranged to be able to support and hold two liquid collection trays beneath and parallel to the two edges of the oven grid being perpendicular to the grid wires, respectively, for collecting 30 excess drippings and meat juices leaving the grooves of the grid cover through the open ends thereof.
DK 177892 B1 3 A grid cover with such a configuration can be placed on a cooking grid with the top folds on the grid wires and the bottom folds forming the grooves in the grid cover material between the grid wires. During roasting or grilling of meat, drippings and 5 meat juices from the meat will be collected in the grooves between the grid wires.
This is advantageous for more reasons. Firstly, the meat is not in direct contact with the cooking grid, which therefore stays substantially clean during the roasting or grilling. Secondly, the drippings and meat juices are removed from the meat, which 10 not only makes it possible to obtain a crispy and more delicious result but also reduces the fat contents of the meat making it healthier. Thirdly, the fact that the meat juices are kept in the grooves just beneath the meat reduces the risk of the meat getting too dry during roasting or grilling, which reduces the quality and taste of the final result.
15
Making the bottom folds shorter than the top folds makes it possible to ensure that drippings and meat juices leaving the grid cover through the open ends of the grooves therein do not fall outside a roasting pan or roasting dish, onto which the cooking grill is placed, while still keeping the full length of the grid wires covered by 20 the grid cover.
This cover differs from the one disclosed in WO 2008/149578 in that the grooves are open at both ends so that excessive drippings and meat juiced can leave the grooves of the cover. The cover differs from the liner disclosed in US 8,234,973 in that the 25 grooves are not perforated so that the drippings and meat juices are controlled to leave the grooves of the cover only through the ends thereof.
An oven grid, which is able to hold and support liquid collection trays beneath the open ends of the grooves in the grid cover, is advantageous because such liquid 30 collection trays eliminate the need for a roasting pan or roasting dish under the oven DK 177892 B1 4 grid for collecting drippings and meat juices, which roasting pan or roasting dish requires space and may be cumbersome to clean afterwards.
In an aspect of the invention, it relates to an oven grid for being used with a grid 5 cover in an oven grid system as described above.
In an embodiment of the invention, the grid bases are designed and dimensioned so that there is room for fingers or hands under the oven grid, when it is placed on a plane surface, such as a kitchen table.
10
Such configuration of the grid bases makes it easier to handle the oven grid when it has to be put into or taken out of the oven.
In an aspect of the invention, it relates to a grid cover for being used with an oven 15 grid in an oven grid system as described above.
In an embodiment of the invention, the material is a greaseproof paper material, such as baking paper with or without a silicone coating.
20 Such materials are easily obtainable, reasonable in price and very well-suited for the purpose.
In an embodiment of the invention, the material is pre-processed with spices and/or other aromatic substances.
25
When such spices and/or aromatic substances come into contact with the drippings or meat juices in the grooves of the grid cover, they will give taste to the meat being roasted or grilled.
30 In an embodiment of the invention, the length of the top folds is between 10 cm and 80 cm, preferably between 25 cm and 50 cm.
DK 177892 B1 5
Such lengths of the top folds correspond to the widths of most cooking grids. If the grid wires are shorter than the length of the top folds, the correct length of the top folds can easily be obtained by folding together the grid cover and cutting off one or 5 both ends of the folded grid cover by means of an ordinary pair of scissors.
In an embodiment of the invention, the distance between any top fold and a neighbouring bottom fold is between 10 mm and 50 mm, preferably between 15 mm and 40 mm.
10
In an embodiment of the invention, the number of top folds is between 4 and 30, preferably between 8 and 15.
Such dimensions and numbers of the resulting pleats in the grid cover are suitable for 15 most cooking grids as well as for standard machinery used to produce such pleats. To some extent, the pleats of the grid cover can be stretched or compressed to fit the distance between neighbouring grid wires of a specific cooking grid.
In an aspect of the invention, it relates to the use of an oven grid system as described 20 above, whereby a grid cover is placed between an oven grid and food, particularly meat, being roasted or grilled using the oven grid system for keeping the oven grid clean and collecting drippings and meat juices.

Detailed description of the invention 5
Figs, la and lb are a perspective view and an end view, respectively, of a grid cover 1 according to an embodiment of the invention.
Basically, the grid cover 1 consists of a sheet of material, which has been folded a 10 plurality of times so that a row of alternating parallel top folds 2 and bottom folds 3 has been obtained, the top folds 2 forming a series of crests and the bottom folds 3 forming a series of grooves 5 there between. In the following, the substantially plane piece of material between a top fold 2 and a neighbouring bottom fold 3 is referred to as a grid cover panel 4.
15
The number of top folds 2 exceeds the number of bottom folds 3 by 1, and the number of panels 4 is twice the number of top folds 2. Thus, if there are n top folds 2, there will be (n-1) bottom folds 3 and 2n panels. In the embodiment shown in Figs, la and lb, for example, there are 11 top folds 2, 10 bottom folds 3 and 22 20 panels 4.
The grid cover 1 can be produced in a variety of dimensions, both when it comes to the size of the sheet of material and when it comes to the distance between neighbouring folds 2, 3 and, thereby, the size of the individual grid cover panels 4. It 25 all depends on the dimensions of the cooking grid 6, with which the grid cover 1 is to be used, and on the distance between neighbouring grid wires 8 on this cooking grid 6. As mentioned above, if the grid cover 1 is too wide for the cooking grid 6, it can easily be shortened to fit the length of the grid wires 8 of the cooking grid 6 by means of an ordinary pair of scissors.
30 DK 177892 B1 8
The embodiment shown in these figures is folded from a rectangular sheet of material but, in principle, the sheet may have any shape, as long as the folds 2, 3 are parallel to each other, and the distance between to neighbouring folds 2, 3 is substantially the same all over the grid cover 1.
5
As indicated in Fig. la, the end parts of each grid cover panel 4 have been bevelled so that the bottom folds 3 are shorter than the top folds 2. This means that the drippings and meat juices leaving the grooves 5 through their open ends will not fall outside a roasting pan or roasting dish onto which the cooking grid 6 is placed, even 10 when the full length of the grid wires 8 is covered by the grid cover 1 (see Fig. 2).
In some embodiments, the material is “flavoured” with different spices and/or aromatic substances for giving taste to the meat being roasted or grilled, when these flavouring substances come into contact with the drippings and meat juices in the 15 grooves 5 of the grid cover 1.
Fig. 2 illustrates schematically how a grid cover 1 according to an embodiment of the invention can be arranged on a cooking grid 6 by letting the top folds 2 hang on the grid wires 8, whereby the grooves 5 of the grid cover 1 are placed between and a bit 20 lower than the grid wires 8. In this way, the drippings and meat juices from the meat being roasted or grilled will collect in the grooves 5 just beneath the meat so that it can give taste to the meat and prevent it from drying out during the roasting or grilling.
25 Fig. 3 is a side view of a grid cover 1 according to an embodiment of the invention.
In this view, it is easy to see how the end parts 9 of each grid cover panel 4 have been bevelled so that the bottom folds 3 are shorter than the top folds 2 as described above.
30 Figs. 4a-4c are a top view, an end view and a side view of an oven grid 6 according to an embodiment of another aspect of the invention.
9 DK 177892 B1
The most significant feature of this oven grid 6 is the design of the grid bases 10, which are formed so that they are able to support and hold two liquid collection trays 11 (see Figs. 6-8b). When mounted in the grid bases 10, these liquid collection trays 5 11 extend beneath the edges of the oven grid 6, which are perpendicular to the grid wires 8 as illustrated in Figs. 7-8b. This means that the drippings and meat juices leaving the grooves 5 of the grid cover 1 through their open ends will fall into these liquid collection trays 11, and that no roasting pan or roasting dish beneath the oven grid 6 is needed.
10
In the shown embodiment, there are four grid bases 10 arranged near the comers of the oven grid 6. In other embodiments, there may be another number of grid bases 10. The important thing is that they are able to hold and support the liquid collection trays 11, and that they leave space under the oven grid 6 for fingers or hands so that 15 the oven grid 6 can easily be handled.
The illustrated oven grid 6 has 15 grid wires 8 mounted on the frame 7. However, the grid 6 may be produced in any desired size and with any desired number of grid wires 8 within the scope of the present invention.
20
Fig. 5 is a side view of a part of an oven grid 6 according to another embodiment of the invention, in which the grid bases 10 are formed by extensions of at least some of the grid wires 8.
25 Fig. 6 is a perspective view of an elongated liquid collection tray 11 to be used with oven grids 6 as the ones shown in Figs. 4a-4c and Fig. 5.
Fig. 7 is a perspective view of an oven grid 6 with two liquid collection trays 11 as described above.
30 DK 177892 B1 10
Fig. 8a is a perspective view of the same oven grid 6 as shown in Fig. 7 with a grid cover 1 according to an embodiment of the invention arranged thereon. In accordance with another aspect of the invention, the grid cover 1 is held in place on the oven grid 6 by means of a couple of round steel bars 12, which are releasably 5 fixed to the frame 7 of the oven grid 6 by means of a number of clips 13.
As can be seen, only a part of the oven grid 6 is covered by the grid cover 1.
Obviously, it is also possible to cover all grid wires 8 of the oven grid 6 with the grid cover 1. It only depends on the number of panels 4 of the grid cover 1 used.
10
Fig. 8b is a detail view of an oven grid 6 as the one in Fig. 8a, only with the steel bars 12 fixed to the frame 7 of the oven grid 6 by means of another type of clips 13.
Fig. 9 is an end view of a clip 13 as the ones shown in Fig. 8a to be used for 15 releasably fixing the steel bars 12 to the frame 7 of the oven grid 6.
