Abstract

Postupak za proizvodnju proizvoda na bazi mesa od celokupnog mišićnog tkiva hladnom ugradnjom maslinovog ulja, naznačen dodavanjem maslinovog ulja posle ekstrakcije proteina mesa, pri čemu postupak obuhvata sledeće korake:a) celokupno mišićno tkivo, na niskoj temperaturi, kome je injektiran odgovarajući slani rastvor koji sadrži vodu, so i/ili začine, stavlja se u mašinu i podvrgava se prevrtanju prema poznatim tehnikama, održavajući masu mesa na temperaturi ispod 4°C i pod vakuumom;b) na kraju mešanja, dodaje se maslinovo ulje;c) prevrtanje se nastavlja sve do potpune ugradnje maslinovog uljad) postupak proizvodnje se nastavlja prema poznatim tehnikama kao što su potiskivanje u crevo, toplotni tretman, pakovanje, vodeći pri tom naročito računa da se temperatura smeše ne podigne do 4°C pre toplotnog tretmana.
