Abstract
PREPARAÇÃO DE AMACIAMENTO/MODIFICAÇÃO DE CARNE,MÉTODO PARA PRODUZIR UM ALIMENTO DE CARNE PROCESSADO, E, ALIMENTO DE CARNE PROCESSADO. Lactato de cálcio, um ácido orgânico, um aminoácido e um sacarídeo são usados como um agente de amaciamento/modificação de carne. O uso do agente de amaciamento/modificação de carne possibilita a produção de um produto de carne processado tendo uma textura suculenta e macia e um bom sabor.
