Abstract
본 발명은 홍곡버섯(Red Yeast Rice)을 포함하는 식품조성물 및 이의 제조방법에 관한 것으로서, 콜레스테롤 합성 저해물질인 모나콜린-K를 함유하고 있는 홍곡균(Red Yeast Rice)을 포함하고 있어, 육류 섭취에 따른 체내 콜레스테롤의 양이 감소시키는데 이용될 수 있다. 특히 햄버거의 제조에 이용될 수 있으며, 홍곡균을 포함하는 햄버거 패티(patty)는 체내 콜레스테롤의 양을 저감시킬 수 있어, 인간의 건강증진에 도움이 된다.
