Abstract

Μέθοδος παραγωγής προϊόντων ζύμωσης-ωρίμανσης απόλεπτοτεμαχισμένο κρέας (αλλαντικά αέρος), η οποία χαρακτηρίζεται από την προσθήκη ελαιόλαδου ή/καιάλλων φυτικών ελαίων σε μερική έως πλήρη αντικατάσταση του ζωικού λίπους με τη βοήθεια μορφοποιημένων πρωτεϊνών σόγιας (ΜΠΣ), ή τριμμένης φρυγανιάς ή ειδικά επεξεργασμένων κυτταρινών. Τα προϊόντα με βάση το κρέας με την άμεση ενσωμάτωση του ελαιολάδου ή/και των άλλων φυτικών ελαίων που παράγονταισύμφωνα με τη μέθοδο αυτή δεν υφίστανται θερμική επεργασία, έχουν εξαιρετική συνοχή και σύσταση, παρουσιάζουν μια ομαλή αφυδάτωση, διατηρούν αναλλοίωτα όλα τα φυσικοχημικά χαρακτηριστικά του ελαιόλαδου ή/και των άλλων φυτικών ελαίων, δεν παρουσιάζουν φαινόμενα τάγγισης και έχουν άριστες οργανοληπτικές ιδιότητες. Η ασφάλεια τους είναι εγγυημένη.
