Abstract
Изобретение относится к винодельческой промышленности, а именно к способу производства красного вина.Способ, согласно изобретению, включает дробление и гребнеотделение винограда с получением партий свежей мезги, их размещение в бродильно-экстракционные резервуары, экстрагирование мезги бродящим молодым виноматериалом, отделение экстрактивного молодого виноматериала от проэкстрагированной мезги, его дображивание и осветление, а также снятие экстрактивного молодого виноматериала с осадка, при этом в процессе или после дображивания, молодой экстрактивный виноматериал дополнительно настаивается на мезге или стекшей мезге полученной от переработки последних, в данном винодельческом сезоне, партий красного винограда.
