Claims (8)
- 글루코오스 중합도가 8이하인 올리고당류 50%이상 및 글루코오스 중합도가 2이하인 당류 10%이하로 구성된 전분 가수분해물을 알코올 함유 수용액에 첨가 혼합하고, 생성 혼합액을 분무 건조시킴을 특징으로 하는 알코올 함유 분말의 제조방법.
- 제1항에 있어서, 전분 가수분해물이 글루코오스 중합도 2이하의 당류 5%이하로 구성됨을 특징으로 알코올 함유 분말의 제조방법.
- 제1항에 있어서, 전분 가수분해물이 알코올의 40W/W% 수용액(알코올의 40W/W수용액(25℃)에 전분 가수분해물의 25% 수용액을 전자에 대해 5%의 양으로 가하는 경우, 5분후 600nm에서 혼합물의 흡광도가 0.5이하인 상태를 의미함)에 가용성임을 특징으로 하는 알코올 함유 분말의 제조방법.
- 제1항에 있어서, 전분 가수분해물이 알코올 수에 의한 분획에 의해 수득된 것임을 특징으로 하는 알코올 함유 분말의 제조방법.
- 제1항에 있어서, 전분 가수분해물이, 제1단계 액화로 DE치가 3이하인 전분 가수분해물을 제조하여 이 가수분해액을 가열 및 비등 시키고, 제2단계 액화로서 α-아밀라아제를 가하여, DE치가 약 12∼20이 될 때까지 가수분해시키는 것으로 이루어지는 2단계 액화 방법에 의해 수득된 것임을 특징으로 하는 알코올 함유 분말의 제조방법.
- 제1항에 있어서, 전분 가수분해물중에 함유되어 있는 글루코오스 중합도가 2이하인 당류를 효모와 같은 미생물을 사용하여 생화학적으로 전환 시킴으로써 전분 가수분해물이 수득된 것임을 특징으로 하는 알코올 함유 분말의 제조방법.
- 제1항에 있어서, 전분가수분해물이, 알코올 농도가 40W/W%이상인 알코올 함유 수용액에, 이 수용액중에 함유된 물에 대해 100∼200%의 양으로 첨가됨을 특징으로 하는 알코올 함유 분말의 제조방법.
- 제1항에 있어서, 알코올 함유 수용액이, 알코올수, 청주 및 와인 등의 양조주류, 위스키, 브랜디 럼 및 쇼꾸 등의 주정제, 미린, 제제주 및 약주 등의 혼합물류, 불가음 처리된 와인 및 미린 등의 주정 조미료류, 바닐라탱크 및 오렌지 에센스 등의 향료류, 페퍼팅크 및 진저에일 팅크 등의 향신료류, 감초근 팅크 및 그린 겐티아나근 팅크 등의 생약팅크, 차잎, 커피원두, 코코아 원두등의 식탁용 기호성 재료의 알콜용 수출액건조 버니로우 및 다시마 등의 조리물의 알코올 추출액 및 이들의 알코올 혼합물로 부터 선택됨을 특징으로 하는 알코올 함유 분말의 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
