1,203,048. Starch hydrolysate compositions. CORN PRODUCTS CO. 30 Nov., 1967 [19 Dec., 1966; 24 March, 1967; 30 March, 1967], No. 54674/67. Heading C2C. Novel low D.E. starch hydrolysate compositions having a D.E. between 5 and 25 and a descriptive ratio of at least 2-0, the descriptive ratio being the quotient obtained by dividing the sum of the percentages of saccharides, dry basis, having a degree of polymerization 1 to 6 by the D.E., are prepared by subjecting a mixture of starch and water having a solids content less than 50% to the hydrolytic action of bacterial alpha-amylase to attain a D.E. less than 15, heating the hydrolysate to a temperature sufficient to deactivate the enzyme and then subjecting the hydrolysate to further hydrolysis by the bacterial alpha-amylase, or are prepared by acid hydrolysis followed by hydrolysis by bacterial alpha-amylase. In addition waxy starch hydrolysate compositions may be obtained by a single step hydrolysis of waxy starch by bacterial alpha-amylase. The compositions so obtained may be concentrated to form low D.E. syrup solids having a moisture content less than 15%.
