Abstract

1387998 Production of wort SCHOLTENHONIG RESEARCH NV 9 June 1972 [11 June 1971] 27401/71 HeadingC6E Steep water from wet milled corn is ultrafiltered to provide a protein rich concentrate and an amino acid rich permeate, one or both of which is added to a mash of amylaceous material which has been treated with acid and/or enzyme and enzymatically saccharified so as to contain >45% maltose by weight of total carbohydrates, the addition being made before or after saccharification to give a total N2 content of 0À4-1 wt. per cent of the dry content, and adjusting the specific gravity if necessary to provide a wort or wort syrup. The mash may contain 10-40% amylaceous material and may be treated by cooking at 100-150‹C for 1-10 mins with mineral acid at pH 1À5-2À5, then cooling, neutralizing and liquefying the starch with a amylase at 40-105‹C and pH 4-7.5, removing insolubles, adding an enzyme to convert starch to maltose and saccharifying. The amylaceous material may be cereal grain or flour. The product wort or syrup preferably contains 90-95% carbohydrates and 1-2% ash based on total solids and the total N 2 is a mixture of proteins, peptides and amino acids , and the Lundin fractions are preferably comparable to those of wort obtained from malt.
