1323380 Light desserts LENDERINK & CO NV 16 Dec 1971 [18 Dec 1970] 58468/71 Heading A2B Preparing light fat-containing food products comprises whipping raw materials conventional for such products, including a single whipping agent consisting of a partially hydrolyzed vegetable or animal protein, wherein the whipping agent is homogenised with at least a portion of the other raw materials prior to whipping. The food product may be a mousse, bavaroises or pudding. The exemplified whipping agent is a product obtained by the enzymatic hydrolysis of wheat protein.
